Shin Brews Japan🇯🇵 Pop-up Tour in Fall 2026 日本ポップアップツアー、2026年秋です！

Stoked to announce that I’m heading to Japan from mid-October to mid-November! I’ll be popping around a few cities, brewing coffees from my friends, @secretcoffeenyc and @worker_coffee. Looking forward to brewing some cups, meeting everyone, and sharing great coffees along the way!

@shinbrews: Shin is a Japanese pour-over brewer based in NYC, working primarily through residencies and pop-ups around the city.
Through these events, Shin shares and represents coffees from remarkable roasters whose work he has discovered and deeply admires.
He started this project after noticing that great coffees, produced and roasted with meticulous care, don’t always receive the attention they deserve at the brewing stage, the final step before they are poured into a cup.
His brewing style emphasizes a tea-like body and high clarity, allowing each coffee’s character to shine.
He enjoys how they evolve as they cool, and hopes you’ll take your time with each cup.
He believes in treating every coffee that passes through many hands with equal care and responsibility, and in sharing each cup with others.

”しんち”こと、簡井心ーと申します。
ニューヨークを拠点にプアオーバーに特化し活動するブルワーです。
現在、レジデンシーとポップアップを通して街の様々なお店でコーヒーを淹れています。
僕が出会った素晴らしいロースターのコーヒーをその素晴らしさを最大限活かした一杯に出来るよう日々研鑽しています。
と言うのも、手間暇をかけて生産され、思考を凝らして焙煎されたコーヒーが、ブルーイングという最後の段階で、同じだけの意識が注がれていないのかな、と感じた経験があったからです。
ティーライクで、高い透明感を大切にし、それぞれのコーヒーが持つ個性をできるだけそのまま感じて頂けるよう努めています。
そうした抽出では、温度が下がるにつれて味わいが深くなっていきます。
ぜひ時間をかけて、一杯の変化を楽しんでもらえたらと思っています
たくさんの人々を通して今目の前に辿り着いたそのコーヒーに同じだけの責任を持って触れて、その美味しい一杯を様々な人達と共有したい、そう考えています。 taken in New York by @shinbrews

Excited to be back at @versecoffee on Thursday, October 15th, brewing three coffees I picked up directly from coffee shops during my recent trip to Barcelona! Featuring @echoes.coffee, @harmony.roasters and @threemarkscoffee !

I’d love to share a little piece of that amazing trip with you along with my signature Japanese sweet potato treat.

This is my third time brewing at Verse, and I’m so grateful to Harmony for always giving me opportunities to grow as a brewer. It really means a lot to me.

Thank you everyone who stopped by today!

Big thanks to Ayaka from @tadaima_ny and Hiro from @95rpmcoffee for making this collaboration happen.

Tadaima was one of the places that helped me get started as a coffee brewer, and 95RPM has become one of my favorite NYC roasters along the way. Being able to bring these two together and share their coffees with you all meant a lot to me.
