@marayrestaurants in Manchester was an absolute feast for both the eyes and the palate šŸ½ļø

If I’m honest, I didn’t go in with sky-high expectations. I’ve been to my fair share of Middle Eastern small plates spots, and too often the flavours are dialled down to suit the masses - missing that bold balance of spice, tang, and texture. But Maray? Completely different story.

I was hesitant about ordering their famed disco cauliflower because, let’s face it, cauliflower in restaurants is a gamble at best. But it lived up to the hype.

Truthfully, you can’t really go wrong here. Everything was incredible, with options to please vegans, carnivores, and pescatarians alike. So next time you’re up north, do yourself a favour and pop in.

Oh and Maray, please open one in London. I’ll be waiting! taken in Maray by @shish.eats

I love a scallop — raw, cooked, baked, fried, however they come.Thought I’d round up a few recent favourites:
šŸ„ @kudurestaurant - a decadent one. Malay chawanmushi, pickled mushrooms, crisp brick pastry. Beautifully layered and a bit of a showstopper.
šŸ‡®šŸ‡¹ @bites.milano - scallop ceviche with buttermilk parsley and king oyster mushroom. Loved it raw for a change.
šŸ”„ @lilyyrichards flame-grills hers with herb and garlic butter. Unfussy and properly good.
🧈 @therocketstoreboscastle - served simply with seaweed butter, lets the scallop do the talking.
šŸŒ¶ļø Vietnamese-style scallops - punchy & bold flavours. The heat and sharpness paired excellently with the sweetness of the scallop.
šŸŽ„ And last Christmas, @guccipard and I made them at home with pea purée and crisp chorizo. A classic pairing, and one I’ll keep returning to.
More scallop recommendations always welcome :) by @shish.eats

@swilipino takeover at @mambow_ldn did not disappoint.

I don’t eat enough Swedish or Filipino food, so eating both in one evening was a treatšŸ½ļø

Prawn and water chestnut balls, infused with brown crab meat and topped with crisp lumpia. Mmmmmm

The summer salad was a standout: bitter leaves, nectarine, crayfish tails, and Thai basil tossed in fish sauce, topped with toasted coconut powder. Zesty, fruity, fresh - the essential elements of a summer salad.
For the finale, an ice cream cookie sandwich filled with Horlicks ice cream and raspberry coulis. by @shish.eats

Ling Ling’s Supper Club 🄢
~ What a special evening @ling_lings_ @dina_wines , food was so delicious and I loved that there was lots of it! I hate leaving somewhere hungry and with small plates on the rise - it happens often… For me a great evening always consists of two things : good food and good people, thanks Jenny for providing that ~

šŸœ This aubergine based broth was life changing, one of the best broths I’ve ever tasted and veggie based ?!
🦐 Homemade wontons, elite flavours and I liked how the prawns weren’t pulverised but whole
šŸ£ A very generous portion of tuna tartare that was the best I’ve had not by the sea
🄪 Mala style pork/beef ragu, Italian + Asian flavours worked so well together - served with pickles, genius!
🄪 Tofu Sando - my kind of sandwich
šŸ„’ Smashed cucumber, a necessity always
šŸ° Dark chocolate tiramisu with ginger - elite combo by @shish.eats

As I haven’t gone away this year, I’ve had the chance to reminisce on all the tongue tingling, saliva-inducing, stomach filling dishes I had the privilege of gorging last year.

This was the first time I tried sea urchin. Nothing like expected, I thought it would be fishy, slimy and overall an acquired taste. But no, it was sweet, salty, umami - all the best flavours blended into one scoop of delicious goodness.

🐚Vietnamese style scallops
🦪 Oysters served with wasabi instead of a typical mignonnette - not sure why I didn’t think of this earlier

Happy Easter! Where do I begin….
• Jacques Pépin-inspired scallops by Isaac cooked in wild garlic butter, dusted with Paprika and served on a plate of blanched scallions (my new fave way to eat spronions!)
• Roast lamb with a beautiful hazelnut and orange zest crumb šŸŠšŸŒ°šŸ‘, thank Marco Pierre White for this one
• Potato Gratin topped with GruyeĢ€re (I’m not one for non-crispy potatoes but these blew me away!)
• A simple rocket and lambs lettuce salad with balsamic and Parmesan
• All served with wild garlic based salsa verde and creamy garlic sauce
šŸ’Whilst watching Marco’s tutorial, he said some advice that has really stuck with me, don’t let a recipe restrict you - think of it as a guide 🫵 sometimes I get obsessed with perfection in a recipe and 9/10 times if you trust your gut and change it, it’ll end up better than the original šŸ’‹ taken in Kernow by @shish.eats

Thank you @mambow_ldn for in @guccipard’s words ā€˜the best meal in London’ 🄢
Not for the faint hearted, Mambow is a modern Malaysian restaurant that does not shy away from spices, flavours or flamboyance šŸŒ¶ļø

As an Indian, I often am left overwhelmed with depth of flavour and false claims of spice - but Abby Lee’s menu did not disappoint 🤪

Standouts:
• Otak Otak prawn toast 🦐wrapped in betel leaf
• Cuttlefish salad šŸŽwith winged beans, sambal belacan, red pomelo and fried ikan bila
• Chilli Crab Kuih Pie Tee šŸ¦€with stir fried yam and crispy top hats
• Dark soy and coriander root braised pork belly, cloud ear mushroom, sambal belacan
• Cocktails are all round worth the money and orange wine (if you’re into that) is delightful by @shish.eats

The Seahorse, Dartmouth ~ a meal I’ll never forgetšŸ“

I’m not one for simple food, but the fresh fish paired with delicate flavours was the only way to respect these ingredients šŸŽ£

StandoutsšŸŽ–ļø
•Turbot with pil pil sauce blew my mind and my mouth
•Carpetshell clams 🐚 I could’ve eaten 100 bowls of this
•Puntarelle alla romana (greens tossed with anchovy and garlic dressing), the only way I want to eat greens from now on by @shish.eats
