High fibre seeded oat bread 🌱

This loaf is naturally gluten free (but if you are coeliac ensure you use GF oats), and sooooo delicious!!!!!

Recipe:
- 350g oats
- 400g Greek yoghurt
- 1 tsp sea salt
- 2 tsp bicarbonate of soda
- 1 egg
- 200ml milk
- mixed seeds on top

Mix all dry and wet ingredients together then combine. Pour into a lined baking tin, add mixed seeds on top and pat down gently, then make a cut down the middle with a knife.
Pop into the oven for 45 mins at 200°C and then leave to cool for 5 mins. I saw a tip to take the paper off then put back into the oven for 5 mins to let the crust crisp up, but this may not be necessary!

Store in the fridge or freezer to preserve 💛

Okay. This is the real winner

Fried banana, date, peanut butter, dark chocolate maple cinnamon oats (that’s a mouthful) 🍯🍁☕️🧸🥥

How do we feel about fried banana? 🍌

Recipe:
- Put some oats in a saucepan with some water (enough to cover the oats)
- Add a dash of milk
- Add maple syrup & cinnamon to taste
- Stir on medium heat until desired consistency (may need to add more liquid if it becomes too thick)
For the banana:
- Half a banana
- Add olive oil/butter and cinnamon to a frying pan on medium heat
- Add banana and let it fry for a couple mins, then flip
- Add oats to a bowl
- On top add a spoonful of Greek yoghurt (I use fage lactose free 0%)
- Add fried banana
- Add a spoonful of PB (I use manilife crunchy)
- Add chopped dates (I used just one medjool date)
- Add some chocolate shavings (I used m&s 85% dark chocolate)

The nutrient most people aren’t getting enough of… 👀

Let’s talk about FIBRE! 🥑🥝🥦🫑🫒🌽🫛

Fibre is often associated with bowel movements, but its benefits go far beyond keeping you regular.

Here’s why it’s so important:

🌱 Gut health: Fibre helps support healthy bowel movements and can help prevent constipation.

🌱 Heart health: Soluble fibre can help lower LDL (bad) cholesterol.

🌱 Blood glucose: Certain types of fibre slow the absorption of glucose, helping to support blood glucose regulation.

🌱 Gut microbiome: Some types of fibre act as prebiotics, providing fuel for beneficial gut bacteria.

🌱 Satiety: Fibre can help you feel fuller and more satisfied after meals.

So how much do we actually need?

The UK recommendation for adults is around 30g of fibre per day, but many people fall short.

Some easy ways to increase your intake:

🥣 Choose oats and wholegrain cereals.
🍓 Include fruit and vegetables throughout the day.
🫘 Add beans, lentils and chickpeas to meals.
🍞 Swap to wholegrain bread where you can.
🥜 Include nuts and seeds.

One important thing: increase fibre gradually and drink enough fluids to help your digestive system adjust, particularly if you’re not used to eating much fibre. Increasing it too fast and not hydrating enough will not react well!

And remember, more isn’t always better! Your fibre intake should be appropriate for your individual needs.

Save this as a reminder to give fibre the attention it deserves 🤎

Ever wondered whether working with a dietitian could help you? 🤍
