Queso birria tacos topped with onion, cilantro, lemon/lime, salsa & guacatillo.

Or you can make birria ramen.

I typically use a 2 lb chuck roast but in this video I used a 4 lb. The 2 lb roast doesn't last beyond a day in our household.

Ingredients:
4 lb chuck roast
1 garlic bulb (use approx. 10 cloves)
1 pack of bay leaves (use approx. 10 leaves or a handul)
2 white onions
1 bundle of cilantro
1 bag of limes or a few lemons
1 jar of Birria Marinade (got from Cardenas).
Corn tortillas
Queso cheese
(Or ramen if you are going that route)

Directions:
Place the meat in the crock pot.

Add water. I add enough water to reach to the top of my roast. Approx. 3-4 cups

Add 10 garlic cloves, 10 bay leaves, & 1 chopped onion to the crock pot.

Add birria marinade and stir. I started with 3 large spoonfuls. I added more later to taste.

Cook on high Approx. 6-8 hours (or until meat is soft and easy to shred)
*The 4lb roast took approximately 8 hrs.

Once the meat is cooked, shred it and taste the consumé. If you feel like it needs more flavor, then add more marinade and mix it well. If it tastes too salty, add more water. If you are serving over ramen and want more consumé then add more marinade & water.

Top with chopped cilantro, onion, lime and whatever else you like.

"A lil remix on lasagna"

My kids always want me to make Spaghetti & I get tired of eating that, so I like to make this lasagna soup. Tonight I used elbow pasta because I did not have any lasagna noodles on hand.

All Ingredients were under $35
Ingredients:
1lb of ground beef (lean)
1/2 onion diced
1 red bell pepper diced (optional)
1 - 28oz can of crushed tomatoes
1 - 14.5 oz can of petite diced tomatoes
1 - 32 oz container of beef broth
1 - 8 oz container of heavy cream
1 package of 12 oz lasagna noodles
1 - 8 oz package of shredded mozzarella cheese
1 - 10 oz container of shredded parmesean
Optional: Ricotta Cheese *I did not use in the video*

Seasonings:
Italian Seasoning
Garlic salt (very minimal)
Fresh minced garlic
Crushed red pepper flakes (optional)

Directions:
Add all canned items, 32 oz beef broth container, and diced veggies to the crock pot.

Season the ground beef with a generous amount of minced garlic & italian seasoning. Then add some garlic salt (minimal garlic salt because the broth has sodium in it) & add crushed red pepper flakes to give it a lil kick.

Once meat is browned add it to the crock pot. If you do not use lean meat then drain the meat before adding it to the crock pot.

Put the crock pot on high for 2 hours or so. This allows you time to take your kiddos to sports practice or help them with homework, etc.

After 2 hours break up the lasagna noodles into bite size pieces and add them to your crock pot.

Cook for another 30 minutes in the crockpot until the noodles are soft. Then, add approximately 1 cup of heavy cream and half of the container of parmesean cheese. Stir & mix well. *Do not overcook or noodles will be soggy.

Serve & top with more parmesean cheese, mozzarella cheese & ricotta cheese.  Serve with whatever sides you like (salad, garlic bread).

Carnitas Tacos  "White Girl Style"
*Easiest & cheapest meal*

Tip: I like to make this on Sundays. I let the meat cook all day long, then I have dinner made for Sunday & Monday night.

Ingredients:
2 lb pork shoulder (Approx. $10 @ Walmart)
1 bundle of cilantro
1 white onion
2-3 avocados
Lemons
Corn tortillas
Oil
Salt
Milk
Salsa

Directions:
Place pork shoulder in crock pot (I cut mine down the middle). Add approximately 1-2 cups of water to cover the bottom of the crock pot.  Add salt to the crock pot (be generous).  Cook on high for 4 hrs or low for 8 hrs.

While the meat is cooking, chop up your cilantro, onion & lemons and store in the refrigerator until your meat is done.

Once the meat has cooked, shred it up. Then cook for another half hour or so. During this time fry your tortillas if you want fried tacos (I fry mine briefly so they are still soft & pliable).

Once the meat is done, drain it. You can save some of the juice to add back to the carnitas after you are done frying them if you prefer.

Then add milk to a frying pan and fry the carnitas. Don't ask questions,  just do it! Fry until golden brown. Add more salt at this time if needed. You can also add cumin and garlic powder to tase (optional).

Serve carnitas tacos & top with onion, cilantro, lemon, avocado, & salsa.

Since people always comment on my meals I post on Snapchat, I think I will start sharing them on IG.

Ingredients:
1.5 - 2 lbs of boneless/skinless chicken thighs
1 bag of small yellow potatoes
1-2 bags of green beans
1 yellow onion
Chicken broth - 1 cup
Heavy Cream - 1 cup
Olive oil - 2 tbsp
Butter - 2 tbsp
Garlic powder - 1 tsp
Cumin - 1 tsp
Oregano - tsp
Salt
Pepper

Directions:
Season chicken with salt, pepper & garlic powder to your liking, and sear both sides in a pan on medium heat until chicken is brown & cooked through (approx. 8 min on each side).

While chicken is searing, chop potatoes in half and chop onion.

Once the chicken is done, remove it from the pan. To the same pan add olive oil, butter, onion, spices, salt & pepper. Sauté your onion (approx. 2-3 minutes).

Then add the potatoes & chicken broth to your onions. Stir, cover, and simmer for 15 minutes (until potatoes are nearly soft).

Then add heavy cream and green beans to your pan. *(At this point add more of the listed seasonings to taste, if needed. Feel free to throw in extra heavy cream & chicken broth). Stir, cover, and simmer another 15 minutes or so, or until green beans are soft enough to your liking.

Lastly, return your cooked chicken to the pan & top with parmesean cheese. Cover and allow cheese to melt.

Serve and top with sauce from the bottom of the pan.
