HEIRLOOM TOMATO & PIMENTO CHEESE FRITTATA 🍅

Before heirloom tomato season disappears, make this. Inspired by the Southern tomato & pimento cheese sandwich, with buttery panko standing in for the toast.

Serves 4 | 10-inch skillet

PIMENTO CHEESE
115g extra-sharp white cheddar, grated
42g mayonnaise
57g (2 oz) diced pimentos, well drained
1 tbsp finely grated sweet onion
⅛ tsp garlic powder
½ tsp Worcestershire
¼ tsp Dijon
½ tsp lemon juice
¼ tsp black pepper

Mix and refrigerate at least 1 hour. No salt until you taste it chilled.

FRITTATA
5 large eggs + 1 yolk
2 tbsp snipped chives
Salt & black pepper
1 tsp butter
2 medium heirloom tomatoes
100–120g pimento cheese (above)

BUTTERY PANKO
½ cup panko
1 tbsp butter
Pinch salt + black pepper

TO FINISH
Fresh basil
EVOO
Flaky salt, if needed

Heat oven to 350°F convection.

Slice tomatoes ¼–⅜” thick. Lightly salt on paper towels 15–20 min, then blot both sides very well.

Toast panko in 1 tbsp butter until deeply golden; season lightly.

Butter a 10” ovenproof skillet. Whisk eggs + yolk vigorously 45–60 sec until slightly frothy. Add chives, pepper and a little salt. Pour into skillet.

Bake until edges are set and center is still distinctly jiggly, about 5–8 min.

Top with tomatoes, then dollop 100–120g pimento cheese over and between them. Bake 2–3 min more, then broil 30–60 sec until bubbling and lightly browned.

Rest 5 min. Finish with buttery panko, torn basil, black pepper, a little EVOO and flaky salt if needed.

It’s late summer in a skillet. 🍅

I have a philosophy I’d like to pass on to you as I complete my 54th trip around the sun and begin the 55th: always wear new shoes on your birthday.

Not for luck, exactly, but for intention. Another year begins, and there is something quietly hopeful about taking its first steps in shoes that have never been anywhere.

Choose them carefully. What you put on your feet should say something about how you intend to walk through the year ahead.

The past has its footprints. The year ahead does not.

Oh…and one last thing:  Life is short. Get the shoes.

One of my favorite recipes I’ve developed this year.

Imagine the bold flavors of a classic Roman cacio e pepe transformed into a crisp, creamy baked bucatini frittata. Toasted Tellicherry black pepper, plenty of Pecorino Romano, a hint of fresh lemon zest, and a golden broiled cheese crust make this one incredibly satisfying.

My biggest tip: pull it from the oven while it’s still just a little soft in the center. It will continue to cook as it rests, giving you the creamiest texture.

Serve it with a simple arugula salad, plenty of extra Pecorino Romano, freshly cracked black pepper, lemon wedges, and a chilled glass of Albariño.

Skyfall Crispy Bucatini Cacio e Pepe Frittata

Serves 4

Ingredients
• 8 oz (225 g) bucatini
• 5 eggs + 1 yolk
• 130 g (4½ oz) finely grated Pecorino Romano, plus 15–20 g for topping
• 2 tbsp melted butter
• 1 tbsp toasted, coarsely cracked Tellicherry black peppercorns
• 3–4 tbsp reserved pasta water
• 1 tsp lemon zest
• Salted pasta water

Method

1. Cook the bucatini 1–2 minutes shy of al dente. Reserve ½ cup pasta water.
2. Toast and crack the pepper.
3. Whisk the Pecorino with 3–4 tbsp pasta water into a smooth cream. Taste and season with Diamond Crystal kosher salt only if needed.
4. Whisk together the eggs, yolk, butter, lemon zest, and ¾ of the pepper. Stir in the Pecorino cream, then fold in the pasta and remaining pepper.
5. Transfer to a buttered 10-inch skillet.
6. Bake at 350°F convection for 14–16 minutes (or 375°F conventional for 16–18 minutes) until just set but still slightly soft in the center.
7. Top with 15–20 g Pecorino and broil about 2 minutes until golden.
8. Rest 5 minutes.

Finish with extra Pecorino, black pepper, lemon zest, parsley (optional), and serve with lemon wedges.

Save this recipe for your next pasta night. 🇮🇹
