As we look ahead to 2026, we’re feeling incredibly grateful for everyone who supported us throughout 2025 — our best year yet!

Thank you to our wholesale partners who have been with us from the beginning, and to our growing community of loyal customers at the farmers’ markets.

We can’t thank you enough for choosing our trout and believing in what we’re doing. We work incredibly hard to bring our products to market, and your support is what keeps this small but mighty fish farm going.

From the bottom of our hearts — thank you. We can’t wait to serve you again in 2026. Cheers! by @skytopsprings

There’s something special about the changing of the seasons here in upstate NY. It’s a consistent reminder that change is good. Embrace it, take a deep breath, take it all in, and remember, no matter what season it is, you can always get trout to eat @skytopsprings 🌞🍁🎃🐟 by @skytopsprings

Congratulations to the @sunydelhi Hot Food Team who competed at the American Culinary Federation Northeast Region qualifier and brought home a gold medal!! We’re proud to have provided the trout for their first course - which we heard was the judges favorite 😎 The Team will go on to represent the Northeast at the National Convention in Phoenix, Az. Bravo team and best of luck! Thank you for using our trout to showcase your work! 🙌👏🐟 by @skytopsprings

It doesn’t matter what type of farming - it’s not a 9-5. It’s a job that may require your attention at the most inopportune times - day or night, rain or shine, sweltering hot or frigid cold, 24/7/365. But with all things considered, it still beats punching a clock and is meaningful work. It’s especially fulfilling to sit down and enjoy the fruits (or trout) of our labor. 🐟🥰 #eatlocal #knowwhereyourfoodcomesfrom #farmlife #aquaculture #rainbowtrout by @skytopsprings

Most people don’t realize just how easy it is to prepare trout, especially fresh, de-boned trout fillet. Just some evoo or butter, lemon, fresh garlic and little bit of salt/pepper is all it needs. Our trout is not fishy at all, which also surprises a lot of folks - fish eaters and skeptics alike. Throw it in a pan, in the oven or even on the BBQ and don’t overcook, because after all, it is exceptionally fresh 👩‍🍳👨‍🍳🐟🤤 #eatclean #eatlocal #eathealthy by @skytopsprings
