🍂🎃 Turkey & Mushroom Cottage Pie with Pumpkin-Butternut Squash Topping 🤎

Cottage pie? Shepherd’s pie? Idk what to call this 😂 but it has a turkey & mushroom base (the mushrooms help make up for some of the meatiness lost from using lean turkey!) topped with pumpkin + roasted butternut squash. Autumn in a dish 🥰🍁

🍄 Filling
1. Sauté 1 diced onion until softened, then add 3 minced garlic cloves and cook until fragrant.
2. Add 1 lb 99% lean ground turkey and cook until mostly done.
3. Add 8 oz diced mushrooms and cook until softened and most of the moisture evaporates. Season with 1 tsp each rosemary & thyme, 2 tsp parsley, and salt & pepper to taste.
4. Stir in 1 tbsp Worcestershire sauce, 2 tbsp tomato paste & 2 tbsp flour until everything is coated.
5. Add 1 cup water + ~1 tsp bouillon (or 1 cup broth!) and simmer until thickened. Stir in frozen peas & carrots. 🌱

🎃 Topping
1. Roast 1 butternut squash at 400°F for 40–50 mins, until fork-tender. Peel, scoop out the flesh and blend until smooth (cutting into chunks before roasting is probably easier and faster 😅).
2. Cook 1 can pumpkin purée in a pan until most of the moisture evaporates, then mix in the squash and cook until you reach your desired consistency. I wanted the convenience + sweetness of canned pumpkin with the deeper roasted flavour of squash. 🧡

🥧 Assemble
Spread the filling in an oven-safe dish, layer the pumpkin-squash mash on top, and run a fork over it for some texture. Bake uncovered at 400°F for 25–30 mins, then broil for a couple of minutes to brown the top (watch closely! 👀).

Pumpkin doesn’t brown quite like mashed potatoes, but it’s still SO yummy 😋 Perfect for cozy autumn dinners! 🍂🤎

🍛 Japanese-Style Lamb Shank Curry 🇯🇵

I wanted to make Japanese-style curry, but switch up the usual protein, so I went with slow-braised lamb shank 🐑✨

The lamb gets super tender after a few hours, and a little grated apple 🍎 is my favourite trick! It adds a subtle sweetness and depth to the curry without making it taste fruity.

Packed with onion, carrots & potatoes, then served over Japanese rice 🍚🤍

The curry: lamb shank, onion, garlic, ginger, grated apple, tomato paste, Japanese curry powder, cumin, garam masala, turmeric, soy sauce & Worcestershire sauce.

Slow cook the lamb for 4–6 hours, adding the potatoes and carrots about 2 hours into the cook. The potatoes naturally break down as they simmer, helping make the curry thick and rich 🥔✨

Served with rice 🍚 and homemade roti canai for some flaky, crispy texture on the side 🫓🤍 makes for a fun combo!

Making mooncakes for Mid-Autumn Festival! 🌕🥮✨

It was definitely a bit of a labour of love 😭 Almost 2 days for that glossy finish to develop as the oil came through ✨ but soooo worth it!!

They weren’t too sweet and had that perfect, authentic homemade taste that reminded me of traditional Hong Kong-style mooncakes 🥹❤️🏮 Definitely made all the time and effort worth it!

I loosely followed Wei Guo’s Red House Spice (@red.house.spice) recipe if you want to give them a try! 🥮✨

🧜‍♀️🌊 The Little Mermaid–inspired dinner 🐚

Bouillabaisse with sea bass, shrimp & mussels, homemade French baguette + a creamy rouille 🇫🇷✨

The best part? Spreading the rouille on warm, crusty bread and dunking it straight into that saffron broth 🤌🏻🥖🍲

🍲 Bouillabaisse
Sauté 1 small onion + 1 fennel bulb in 1 tsp olive oil. Add 2 garlic cloves, then stir in:
1 cup crushed tomatoes • 3 cups fish stock • ½ cup white wine • 1 tsp saffron • 1 tsp thyme • ½ tsp fennel seeds • 1 bay leaf • orange zest + 1 tbsp juice

Simmer 15–20 min, then add 400–450g sea bass. After 3 min, add 150g shrimp + 250g mussels. Cover and cook 4–5 min, then finish with lemon, parsley, salt + pepper. 🌿🍋

🥖 Baguette
Mix 250g bread flour • ¾ tsp salt • ½ tsp sugar • 1 tsp yeast • 175ml warm water. Knead ~5 min, rise ~1 hr, shape + rise another 20–30 min. Score and bake at 220°C / 425°F for 20–25 min.

🧄 Saffron rouille
Mix 2 tbsp Greek yogurt + 1 grated garlic clove + ¼ tsp saffron (soaked in 1 tsp warm water) + ¼ tsp paprika + lemon juice + 1 tsp olive oil + pinch of salt. Chill 15–30 min.

✨ A little taste of Chef Louis’ kitchen 👨‍🍳🐚

🍋🌿 Lemongrass meatballs & pasta for dinner! 🍝

This was SO good! Savoury, a little tangy, and fresh. I added tomato paste to the sauce because I wanted more of a tomato flavour, and I loved how it turned out! 🍅

Meatballs
• 1 lb lean ground turkey
• 2 garlic cloves, minced
• 1 tbsp lemongrass, finely minced
• 2 green onions, sliced
• 1 tbsp fish sauce
• 1 tsp low-sodium soy sauce
• 1 tsp honey or brown sugar
• ½ tsp black pepper
• 1 egg white
• ¼ cup panko

Sauce
• 1 tsp sesame oil
• 3 garlic cloves, minced
• 1 tsp fresh ginger
• ¾ cup low-sodium chicken broth
• 1 tbsp fish sauce
• 1 tbsp low-sodium soy sauce
• Juice of 1 lime
• 3 tbsp tomato paste
• Optional: 1 tsp cornstarch + 1 tbsp water to thicken

🥒 Toppings: cucumber ribbons, shredded carrots & green onions

How I made it:
Mix and form the meatballs (16–20). Bake at 400°F for 15–18 min or air fry at 380°F for 10–12 min.

Cook your pasta according to package directions. For the sauce, sauté garlic + ginger in sesame oil, then add broth, fish sauce, soy sauce, lime juice & tomato paste. Simmer for a few minutes and thicken with a cornstarch slurry if you want. Toss in the cucumber + carrots, then add the pasta and meatballs🍝✨

Top with green onions and dig in! 😋

Baking one of my family’s favourite treats today… pineapple tarts! 🍍🥰

I’m still trying to figure out how to fill these without cracking the pastry 😭 but even the imperfect ones are SO delicious. They’re buttery, tender, and sweet without being too sweet. Definitely hard to stop eating once you start! 🤭

We had an extra pineapple laying around, so it felt like the perfect excuse to make a batch 💛

🍍 Pineapple Jam
• 1 pineapple
• 100g sugar (or more, to taste)
• 1 cinnamon stick
• 2 cloves

🧈 Pastry
• 250g all-purpose flour
• 25g cornstarch
• 25g milk powder
• 30g powdered sugar
• 1/4 tsp salt
• 180g unsalted butter, softened
• 2 egg yolks
• 1 tsp vanilla extract

🥚 For brushing
1 egg yolk + 1 tsp milk

Bake at 160C / 320F for 18–23 minutes, depending on your oven, until lightly golden ✨

If you have any tips for filling pineapple tarts without cracking the dough, please send them my way! 😅

Recreating the ramen from Ponyo! 🍜🐟✨

I skipped the ham because I really wanted to try making chashu instead lol, and it was SO delicious. The broth turned out really smooth, rich, and comforting. 🥹

For the broth, I simmered pork neck bones with onion, garlic, and ginger for about 12 hours at a low boil, then turned up the heat for the last ~30 minutes to get that white, milky colour.

For the tare, I mixed soy sauce, mirin, sake, sugar, garlic, and ginger, then added it to the broth when serving for extra flavour.

The chashu was braised for about 4 hours in soy sauce, mirin, sake, sugar, water, onion, ginger, garlic, and green onions, then refrigerated overnight to let all the flavours soak in.

Served with green onions, homemade mayak eggs, and some bok choy on the side 🥚🌱

Not exactly like Ponyo’s ramen, but still so comforting and delicious! 💕🍜

Attempting to make French onion soup, but with pho-inspired flavours 🍜🧅

I slowly caramelised heaps of onions, then let beef simmer with warm pho spices, ginger, fish sauce and a few other additions until everything was rich and savoury. Finished it with my homemade baguettes, melted Gruyère, bean sprouts, and noodles 🥖🧀🌿

Not traditional French onion soup or pho, just a little experiment combining flavours I love, and it turned out so good! 🤍
