We are back after hibernating this winter. Welcoming spring with an asparagus & green pea lemon orzo 🌳🍋 this took me 15 min to make and was soooo good

- Sauté garlic in a pan with olive oil
- Add orzo and cook it risotto style (adding splashes of chicken broth and letting the orzo simmer and absorb the liquid)
- While this is happening, saute your chopped up asparagus until soft
- When the orzo is al dente, grate Parmesan cheese + splash of lemon juice
- Add asparagus & green peas

roast chicken 🤝🏻 rosemary smashed potatoes

so much easier than it looks and so good especially as we move into colder months

- prepare the base your chicken will sit on: I used rainbow carrots, celery, onions, and apples (unexpected but adds such a nice flavor mixed with the veggies)
- peel carrots and onions, chop the veggies and place them at the bottom of a cast iron skillet. @lecreuset season with olive oil, salt, and pepper
- time to prepare the chicken! you want to stuff the chicken with lots of herbs since this will help flavor the chicken
- I stuffed with fresh rosemary, oregano, parsley, half a lemon, half an apple. you can use any herbs you like (thyme is a popular one but I personally don’t like the taste) can also use garlic
- separate the skin from the meat and slide in some pieces of grass fed unsalted butter (be generous here as this will help so much with juiciness and flavor)
- drizzle a generous amount of olive oil (will help the skin crisp up) + salt and pepper
- bake 425 for 60 minutes

time to make the potatoes:
- place potatoes in a pot and cover with cold water
- bring to a boil then reduce and simmer for 8-10 min
- strain your potatoes and place on a baking sheet
- smash them! can use anything I used the bottom of a glass
- season with lots of salt, pepper, garlic, olive oil and herbs! (I used fresh rosemary and sage)
- bake at 425 for 30 min by @snackingwithjen

This delicata squash deserved its own post. Not typically a squash person but in an effort to eat seasonal produce as we head into the fall, I tried it and it did not disappoint. Picked this up from @eckertonhillfarm @unsqgreenmarket and it literally tastes like candy

- wash the squash, cut the ends off and slice in half vertically
- scoop out the insides and slice horizontally
- drizzle olive oil and season with salt, pepper, dash of nutmeg and cinnamon on both sides
- roast at 425 for 15 min, take them out of the oven to flip and roast for another 15 min

Make this and thank me later!!!! 🍁🍂🍠 by @snackingwithjen

gorgeous peaches from the farm means we’re making a peach cobbler! 🍑

- slice up 3-4 peaches (or however many can line the dish you’re using) and arrange in a buttered baking dish
- add the juice of half a lemon + a sprinkle or cornstarch into the peaches and mix. this gives the peaches a jammy texture when they come out of the oven
- for the crumble, take a half a stick of butter, 1 cup almond flour, 1 cup oats, 1 tbsp cinnamon, dash of salt
- use your hands to mix the crumble mixture together. ideally you use cold cubed butter, but mine had softened on the counter while I was cutting the peaches so we make do 🤷🏻‍♀️
- sprinkle the crumble on top of the peaches and bake for 45 min at 350 F
- while this is baking, make your whipped cream. 1 small bottle of heavy cream + 10 min with an electric mixer = homemade whipped cream. this has no preservatives or added sugar like store bought whipped cream or ice cream so we love that

Inspired by the @datoscanonyc orechiette pasta but simplified it a bit. Literally so easy and took 15 minutes everyone should make this 🥦🍝

- Blanch broccolini (farmers market didn’t have broccoli rabe, either works here)
- Use the same boiling water to cook the pasta (adds some extra flavor)
- While the pasta is cooking saute some garlic, red pepper flakes, and sausage (I used chicken here but anything works)
- Chop up broccolini and add it in
- Once the pasta is done add it into the pan + salt, pepper, shaved Parmesan cheese

best way to end the weekend is cooking an easy meal and getting into bed by 9pm

tonight we did a super easy salad with olive oil, lemon juice, salt and pepper. Farmers market arugula & tomatoes >>

PE & DD has hands down the freshest fish. Only at the market on Saturdays. Saute for 5 minutes on each side, medium heat. Olive oil, salt, pepper, squeeze of lemon juice at the end 🍋 by @snackingwithjen
