오징어순대 / Korean stuffed squid sausage くコ:彡

We’ve been spending the past month in Westport, MA, slowing down, taking a break, and enjoying coastal life. We’ve been doing a lot of catch and cook :)

Tommy went out on a charter and came back with a bunch of squid, so naturally, we’ve been making all kinds of squid dishes. One of them was 오징어순대 (ojingeo sundae), a traditional Korean dish of squid stuffed with a mixture of ingredients that vary by region, then typically steamed.

For ours, I made a filling with squid, whiting (another one of Tommy’s catches), glass noodles, rice, carrots, red peppers, onion, and chives. We steamed some and grilled the rest.

It’s essentially a stuffed squid sausage, but I like to think of it as something between a sausage and kimbap. Hearty enough to be a meal on its own, sliced into little rounds.

A warm version with slightly crispy edges. Love this version for Korean holiday gatherings.
