We are so excited to be in serious eats best chef knives article. “What we liked: Like some Japanese knives with wooden handles that slot into the tang, the Sole blade can be removed entirely from the handle. This is so you can replace the blade (Sole will send you a new one), or so you can add or remove a piece of the blade that acts like a grip guard if you want to choke up on it as you slice. While I was skeptical of this knife at first, it was actually a solid little blade that was great for quick, unfussy prep, like dicing potatoes or roughly chopping an onion. The short, 7.25-inch blade was surprisingly sharp, and I liked the grip guard, which allowed for more controlled handling of the blade. This is a chef’s knife I’d get for a friend who’s new to cooking and wants something that doesn’t feel intimidating to wrangle.” taken in Greenwich, Connecticut by @solecookware
