Tonight’s Mob Feed Monday with @sosochrissy was a Creamy Chicken & Vegetable Soup loaded with roast chicken, potato, carrot, celery, corn and topped with spring onions. Served with crusty buttered bread because winter deserves comfort food 💛

Hearty Chicken & Vegetable Soup
served with Crusty Bread
Servings: 10–12
made by @sosochrissy on @tiktok_australia

Ingredients
1 large roast chicken, shredded
2 tbsp olive oil
1 brown onion, diced
4 garlic cloves, crushed
4 carrots, diced
4 celery stalks, diced
3 large potatoes, diced
2 x 420g cans corn kernels, drained
1L chicken stock
2 tsp mixed herbs
300ml thickened cream
Salt and pepper, to taste
2 spring onions, sliced

Method
1.Heat olive oil in a large pot over medium heat. Cook onion and garlic until softened.
2.Add carrots, celery and potatoes. Cook for 3–4 minutes.
3.Pour in chicken stock and add mixed herbs. Bring to a boil. Reduce heat and simmer for 25–30 minutes or until the vegetables are tender.

💛 #teamLUBLY Tip: For an extra thick, cozy soup, mash a few of the cooked potatoes against the side of the pot before adding the cream. It makes the broth beautifully creamy without needing extra ingredients. 🍲🌻

4.Stir through the corn, shredded roast chicken and cream then Simmer for 5–10 minutes until the chicken is heated through.
5.Season with salt and pepper to taste. Serve topped with spring onions and alongside warm crusty bread & ENJOY with YOUR MOB! ❤️
