Confessions of a wild trout 🙏

Hailing from Priest Lake Idaho, just below the Canadian border. This pristine, wild-shrimp eating fresh water trout is quite the treat. Priest Lake’s beauty is as deep as it’s 300ft depths spanning over some nineteen miles.

In a very hot, very seasoned 12” @lodgecastiron, liquify your rendered fat of choice. Our pick was leaf lard gently rendered by chef @anthonyfarano made from @apricotlanefarms pork trimmings which were provided by @slowfoodventuracounty. Let the fat heat up and then we added the trout.

Once the first side is golden and crispy, gently flip and let the other side get some love. The second side always seems to go more quickly so don’t wait too long before tossing in your butter. @springhillcheese has amazing grass fed jersey products and their butter is so good. Tossing in some fresh herbage, minced garlic, and cippolini onion (we found ours at the @schanerfarms stand at the @smfms) is sure to add great flavor along with basting vigorously on your way to the finish for this line-caught wild beast

Sourced from an angler we know well @chefgabrielboyko. We are told that we’ll soon be able to enjoy this trout smoked by his small private label @smokintailofficial but if it’s as good as is his signature smoked yellowtail (which is available by private order only)...I can’t wait
