This is really something !

The best cheesecake just got better!

Creamy vanilla cheesecake and blackcurrant jelly made using @attyflin_estate blackcurrants

Topped with Madagascan vanilla mascarpone cream

The base is made from Lizzie's wholemeal and spelt digestives - @mannaheritagemill

We are now selling pressed juices and apples cider vinegar from our wonderful fruit suppliers @attyflin_estate. We will have some today and tomorrow in the run up to our break :) taken in Ennis, Ireland by @sourdo_farrell

Many things have changed this year but some crucial bits remain the same..

We will be closed from Monday 6th of July and will reopen again on the 20th.

It has been a wild ride over the last few months since opening 7 days a week. It resolved some big problems for us that we were having but it also created many others. These were mostly short term issues but lots of them ! It was as if a greater force felt they needed to put us to the test! Anyway, we are still here and still going strong.

It took us longer than expected to find the missing people in our bakery puzzle but we are happy to report that we are fully equipped and raring to go ! (after some considerable rest of course 😊)

We wish you all a wonderful summer full of laughter , adventure and al fresco dining ;) we will see how much summer we can squeeze into the next 2 weeks 😁

See you tomorrow, Saturday and Sunday for the final hurrah !

Thanks again for your continued custom and for also being really sound ❤️

Important post - Please share 🙏🏻

Among the obvious difficulties of running a business some members of our team (long standing and newly appointed) are having difficulties finding accommodation within the Ennis area. Prices are continuing to soar high but right now there seems to be nothing available.

If anyone has a room to rent or knows of any room available in the Ennis area please get in touch.

A sad fact was shared with us yesterday that the small apartment where one of our pastry chefs, Rebeca, lived increased from 950€ to €1450 a month overnight once she left last month. This is by no means a new problem and probably not even shocking to many of us anymore but it is completely unacceptable.

The housing situation is grim and it seems nothing will be done to resolve it anytime soon.

So if anyone in Ennis has any rooms available in their home and would like to rent a room to a baker (probably the best housemates tbf) please send us a message.

On a brighter note, we have been open 7 days since February and still going strong . You have continued to support us in your droves. It is clear that this lovely little town of ours wants to stretch and grow and spread it's wings. It's sad to think that if someone from outside of Ennis wanted to make this place their home, the accomodation situation would probably not allow it :(

Sorry , tried to go out on a high.. but I just need to vent

Please share - Job needs filling urgently

We are still on the hunt for a pastry chef. Must have experience baking sweet sweets and desserts/ cakes .we can provide viennoiserie training. We are a Rocksteady team who is unfortunately down a wonderful colleague due to family circumstances.

If you are sound and eager to learn, we will take you under our wings and and bring you up to speed in no time

The greatest buns in all the land.

So many tears trying to get these right over the last few years.

100% sourdough
Crazy soft and ridiculously delicious

We use these for our breakfast baps everyday but currently only have them available to buy on Tuesdays and Fridays

The goal is to have these available each day of the week but we are not there just yet.

We are in our 3rd month of 7 days a week and it has been a blast! We are settling into our new routine and now it's time to call in the reinforcements.

While there are some crossovers between different roles, meaning pastry experience is also welcome, we are currently specifically reaching out to fulfill a full-time role in our sourdough bread production which as it stands has 11 different doughs and counting!

The role is full-time comprising of 4 X 10 hours shifts from 5.30 - 15:30. The successful candidate will be joining a long established team of people great people.
