Filled with strawberries, white chocolate, and cream cheese baking chips, it’s such a good combination. If you haven’t tried this one yet, it’s definitely one to add to your holiday list! 🍓

Some tips and tricks for scoring your sourdough bread 🌷🥖🧺

#sourdough #sourdoughtips #microbakery #easttexas #sourdoughbread by @southernbellebreadco

Let’s talk coil folds 🥖🌷

A few little tips that make a big difference when building strength in your dough!

🥖 Scoop, don’t grab. Use your hands to scoop underneath the dough rather than pinching or pulling at it with your fingers. This helps prevent tearing.

🥖 Lift from the middle. Gently lift the dough from the center, stretching it as far as it will go without ripping.

🥖 Let the dough do the work. As you lower it, allow the ends to naturally fold underneath themselves.

🥖 Rotate and repeat. Turn your container and repeat the process, making sure to work the sides of the dough, too.

🥖 Watch your dough, not just the clock. I typically do 3 to 4 sets of coil folds, or until my dough has developed enough strength to hold its shape.

Remember, the goal is to gently build strength while preserving its structure. 🤍

Save this for your next dough day! 🥖

Things I wish I knew before starting a sourdough microbakery 🌷🥖

If you’re balancing a bakery with a full time job, motherhood, or everyday life, these tips will make dough days a little easier!

🌷 Use cold water to slow bulk fermentation and give yourself more flexibility.

🌷 Freeze cinnamon rolls before their final proof to prep ahead and simplify dough days.

🌷 Use the aliquot method to help gauge fermentation.Taking a small sample of your dough and tracking its rise can help you understand how far along fermentation is. Think of it as a guide, not a rulebook. Don’t forget to trust your baker’s intuition.

🌷 The shaping method that worked beautifully last week might not be what your dough needs today. Adjust your shaping technique based on what your dough needs instead of forcing the same method every time.

🌷 Explore free recipes first. You don’t have to buy recipes to become a great baker! There are so many incredible recipes available for free on social media, including from creators who generously share their recipes just like I do. Before spending your money on a paid recipe, see what free resources are available and find one that works for you.

The biggest lesson? Sourdough doesn’t have to be harder than it needs to be. Sometimes the smallest adjustments make the biggest difference. 🤍

Save this for your next dough day, and tell me what you wish you knew before starting your microbakery! 🌸

For my pink bake, I made a dragon fruit sourdough loaf with strawberries and white chocolate chips. Save the recipe, gather your ingredients, and bake along with me!

Ingredients
• 500g bread flour
• 350g water
• 100g active sourdough starter
• 10g salt
• 30g dragon fruit powder
• 1 oz freeze dried strawberries
• 1 cup white chocolate chips

Method

1. Mix water, starter, flour, and dragon fruit powder. Rest for 30 minutes, then incorporate the salt.
2. Perform 3 to 4 sets of coil folds, 30 minutes apart. Add strawberries and white chocolate chips during the second or third set.
3. Bulk ferment until risen, airy, and bubbly.
4. Shape, place in a floured banneton, and cold proof for 8 to 16 hours.
5. Bake in a preheated Dutch oven at 450°F for 30 minutes covered, then 15 minutes uncovered.
6. Cool completely before slicing and enjoy! 💗

One pink bake can help inspire another. Let’s fill the feed with pink and turn our love of baking into something meaningful!
