Moelleux, généreux et délicatement imbibé, le baba est bien plus qu’un dessert : il raconte à lui seul plusieurs siècles d’histoire pâtissière européenne.

Ses origines nous conduisent de l’Europe centrale à la France, avant que le baba ne trouve à Naples une terre d’adoption exceptionnelle. Les pâtissiers napolitains se l’approprient et en font progressivement l’un des grands symboles gourmands de leur ville.

Pour vous raconter cette histoire, nous avons eu le privilège de pénétrer dans les cuisines du magnifique @splendideroyalparis et de son restaurant @ristorantetoscaparis.

Un immense merci à leurs superbes cuisiniers et chefs (@chefpaoloambrogio) pour leur accueil, leur générosité et leur talent hors pair. À travers leurs gestes, le baba napolitain redevient ce qu’il a toujours été : un dessert de tradition, mais surtout de transmission et de savoir-faire.

There is a particular moment in Paris that belongs only to those who wake before the city does.

The cafés are still arranging their chairs onto the pavement. Delivery vans disappear into narrow streets before the first wave of commuters arrives.
