High Protein Chicken Tortilla Soup! So good!

Recipe inspired by @smaller_sam.pcos and thanks @barb_wannabe_chef for reco

Ingredients:
1lb of chicken
Taco Seasoning
3 cups of bone broth
1 can of black beans
1 can of white beans
1 can of corn
1 teaspoon of jalapenos
1 cup cottage cheese
Tortilla chips for garnish

Instructions:
- Season chicken with taco seasoning and salt if needed and pan fry
- add chicken broth, beans + onion and simmer for 10 mins
- remove, chop chicken and then add it back to pot
- add corn and cottage cheese and simmer last 10 mins (the curds will melt)
- serve and garnish with tortilla chips

Saltimbocca Alla Romana 🤌🏼🤌🏼
Traditionally with veal but I used pork tenderloin
1) pound thinly
2) place sage leaf
3) layer prosciutto
4) dust flour
5) fry in butter and oil
6) remove from fire
7) deglaze with white wine + more butter
8) add back to soak sauce

Thai Crispy Rice Salad 🤌🏼🇹🇭
1) Rice: day old jasmine rice mixed with Thai red curry paste and air fry until crispy
2) Dressing: chopped ginger, soy sauce and sugar
3) Salad: chopped cilantro, green onions, red onions, avocado, peanuts
