“Your scientists were so preoccupied with whether or not they could, they didn’t stop to think if they should.” — Dr. Ian Malcolm

A team of scientists have created a new coffee filter that removes half the caffeine while “retaining key compounds.”

Findings were recently published in the Journal of Membrane Science, representing the work of researchers from the University of New South Wales in Australia and Okayama University in Japan. These scientists created a filter made of graphene oxide, “an atomically thin, sheet-like carbon material that can be assembled in layers.” Between the sheets they incorporated sodium alginate crosslinked with calcium ions, which affects the types of dissolved compounds able to pass through the layers.

The pumpkin spice latte has had a death grip on the coffee industry since Starbucks stole it from Tori Amos three decades ago. But in the past 10 or so years, the seasonal beverage has hung like a specter over the very un-autumnal months of August and September. You can get a PSL right this very minute if you want.

Over the years we’ve seen a multitude of things getting pumpkin spiced with varying degrees of success: Saucony sneakers, a 7-Eleven Slurpee, Peeps, the espresso martini, and Spam. But now I am happy to report that the pumpkin spice latte is dead.

Who decides how we talk about coffee flavor? What strengths and limitations can be found in a global vocabulary? 

For Vishrutha Shetty, coffee was just one taste—“coffee”—informed by stolen childhood sips from fruit grown on her grandfather’s farm. Later in life a series of cupping sessions in Bengaluru expanded her flavor spectrum, but when she visited the United States for coffee training, something went lost in translation. 

“My palate wasn’t untrained. It was trained by a different kitchen.“

In the city of Los Angeles and its environs, there’s one question a traveler will find themselves asked again and again: What part of town are you staying in? Where are you located? Driving across the city can make for an all-day affair, especially if your timing doesn’t account for traffic congestion. Bump into a friend on the street, and they’ll ask you to join in for a cup of tea.

But now this deeply rooted tea culture is making room for a complimentary growing coffee scene. This extends from beyond Kathmandu, the nation’s urban center, and into every corner of life in Nepal. Entrepreneurs are shifting Nepal’s tea-drinking habits into coffee, by opening up coffee shops, roasteries, and offering barista courses.”
