Columbia Part 2 May 2026
The Cocora Valley (Valle de Cocora) hike was unbelievable, we did a 9 mile loop filled with the towering Quindío wax palms, the national tree of Colombia and the tallest palm species on Earth, reaching up to 60 meters (200 feet) high. We went by a hummingbird sanctuary and hiked right by a river.
I was slow(this is putting it generously) on the hike with a busted knee but Shannon is the best encourager and we did it! taken in Cocora Valley, Salento, Colombia by @stephshafer

Salento, Columbia, May 2026 Part 1
Our South America trip continued with an amazing coffee tour and tasting some of the most delicious coffee. Shannon definitely won when it came to picking out the best coffee cherry on the tree. I was the champion of mispronouncing Spanish words of course. We rode everywhere in colorful Jeep taxis up and down the mountain roads. The beautiful homes and colors definitely reminded me of Encanto and Tejo, a game like cornhole, but played with rocks and dynamite, is my new favorite. taken in Coffee Tree Boutique Hostel Salento by @stephshafer

Cotopaxi, Ecuador 🇪🇨 May 2026
An amazing few days with my west coast bestie at the foot of a beautiful volcano. This is a video submission to be selected on a volunteer trip to help rebuild the Patagonian hiking trail in Torres del Paine National Park. This volunteer effort aims to repair and rebuild heavily eroded trails for 5 days with other volunteers. Over the weekend my cousin, mom, and I conquered 20 miles of sand dunes in a Florida State Park at the Mammoth March. It was such a great time together, and I’m super proud how we battled the weather and our bodies falling apart and finished the race. I can’t move today, but not bad for a girl who has every ligament in her left knee torn. 😂 And I don’t think I’m walking in sand ever again. #mammothmarch taken in Sand Dunes by @stephshafer

Summer is almost officially over, so it’s an excuse to post one of my favorite photos of the summer! A turtle swimming in Aruba, which I’m not sure how @mariahbatz got this photo while swimming and when her phone had the waterproof cover on it. What a dream to spend time on the island of Aruba that I have sung about in the beach boys song since I was a little girl. This moment in time made me want to be a full supporter of paper straws to save the turtles, but we the people have got to make better paper straws that don’t melt in your mouth. #aruba #savetheturtles taken in Aruba by @stephshafer

Just missing Korea today. Highlights include: some of the best baseball vibes ever after we bartered for a ticket with the little cash we had on us, salt bread-it’s honestly a bucket list food, hikes we vastly underestimated how difficult they would be as we clung to rails and pulled ourself up the mountain , Korean BBQ, all the food to be clear except for the vinegar digestive juice the Korean porridge restaurant served us, our daily stop at Rewire Coffee, Shannon teaching me the language, but I only remembered one word that I could shout at the refs at the baseball game, and adventures with one of my best buds. ❤️ taken in Yêu Đồng Nai by @stephshafer

Japan.🇯🇵. You were amazing, from the food, the beauty, the people, the cherry blossoms, and the 7/11 snacks in the evening ,there were so many unforgettable memories. I’ll never forget playing frogger on the sidewalks, holding a warm ceramic mug of tea in my hands, experiencing the art in the Teamlab museum, the magic of the Disney parades, and the awe of the bamboo forests and Mt. Fuji. Grateful to have experienced this all with my adventure buddy Smeash. by @stephshafer
