Our oldest girl is 10 years old today. And is as opinionated and bossy as ever as she travels the world with us. So grateful for this little creature to have come into my life. by @stevenwaters

For the last 2.5 years, I’ve been (somewhat) quietly working on a project in Denver that is getting closer and closer to share each day. This one hits especially close to home: I started going to Rockbar at 19 with a fake ID. Never—not in my wildest, Mad Dog–fueled nights—did I think I’d one day own a restaurant and bar operating in that exact same space.

Rockbar was dingy, dirty, seedy, rambunctious, and unapologetically authentic. Like so many people growing up in Denver at that time, I had countless good nights there… and consumed far more MD 20/20 than any human should.

Life has changed a lot since then—and now, so has that space. We could never recreate Rockbar (nor should anyone attempt that level of chaos), but we hope people will find a new kind of love for the place, the same way so many did back in the late 2000s. It will be a very different experience, but with all the reverence the address deserves.

Rockbar will soon become The All Inn Hotel, a 54 room boutique hotel complete with multiple indoor and outdoor F&B outlets. We’ve got an incredible team building the next iteration of 3015 East Colfax, and I cannot wait to share it with everyone in just a couple of short months.

A year longer and another year stronger. So grateful to continue to build this life with my love @ashleyelizawaters
We’ve moved, traveled the world, bought a home in NYC, built a family with the sweetest French girls imaginable and are working on projects we’ve dreamt about for so long. Each year somehow seems to get better and better and I can’t wait for what year 7 has in store for us. (Easter egg at the end for her fans) taken in Denver, Colorado by @stevenwaters
