This has been Quynh’s most satisfying jiggle on focaccia to date. She thought she over hydrated it but it turned out just right! 😮‍💨 😅 . @_ancoravino_ led us to this Vermentino that elevated our next seafood course so well; such a fun wine that was floral with notes of mango and green pineapple swirling around. I make mistakes all the time ESPECIALLY when it comes to baking. This session’s lesson: if the eggs are labeled “large” but feel bigger, they are probably are indeed “extra large”. During a batch I took the dog for a walk. I look over across the street and see this little shelter on fire. In front of me there’s a couple sitting on a bench, chatting and looking over at it like it’s a bonfire. The fire starts roaring and shoots up the telephone pole that is right next to it, which snaps me out of my confusion. This is not a dream. I call the fire department and the talking couple wait a bit, before getting up, walking their separate ways slowly and calmly. Am I in a 90s music video? Next lessons this night: don’t leave a batch baking in the oven and then go for a “quick walk”, if it looks unreal remember you’re in the Bay, it probably is actually happening. #croquembouche #sanjose #stockandcandor #practicemakesbetter by @stockandcandor
