A beautiful matched pair of oyster shuckers recently completed for my good friends at @gusbourne_wine

The oak handles were hewn from a storm-fallen tree on the estate, giving these pieces a real connection to the place they'll call home.

A cracking pair, made to be used and enjoyed for years to come.

#1423, SECARE...

... with subtle but stunning red embellishments throughout.

The Secare model gets 5mm steel stock and a sharp end of 110mm.

They measure in at 230mm overall, and the blades are 40mm deep at their widest.

Full flat grinds, micro secondary bevels, stonewashed finish, the spines of the blades are also finished to enable ferro rod use.

Natural canvas Micarta scales over bright red G10 liners, which are 0.8mm thick.

The scales are secured, very secured, by a trio of flared 8mm stainless tubes.

The handmade @wileboreleather sheath a thing of beauty and purpose too.

Utterly bombproof, made more so by a double row of complementary red stitching.

Now sold, but similar builds would be available priced at around £525. taken in Portland Works by @stuartmitchellknives

I have been ascending and descending these stairs almost every day for around 46 years now.

A couple of days ago was the first time, the first time that I remember anyway, noticing the ‘Mind the Step’ warning.

Even without seeing it, I have minded those steps every day 😂

Kicking off 2026!

A few months ago, I was contacted by new clients after they had visited @restaurant_joro and used the knives that I supplied to there.

A few years previous a Sweet Chestnut tree lost the battle with a storm in their garden. If they brought a chunk in, might I be able to make them a carving set handled in their timber?

They brought a chunk, alright, it was a good 20" x 20" and maybe 10" thick (photo shows it after I had started cutting it).

P120 for scale, the section standing upright on top is the section I cut out to use.

The set was completed a couple of weeks ago, just in time for Christmas dinner.

My life has recently been fraught with hip flask woes (see the second photo).

That flask was kindly gifted to me many moons ago by a good friend at @jamespurdeyandsons. It has served well but finally given up the ghost.

I didn't fancy breaking in a new bright silver pewter flask, so I have been looking for something a little different. It looks like it was right under my nose the whole time.

Chatting a couple of days ago with my equally good mates and colleagues @sheffield_engraving_ltd, they advised that they could help, and help they did.

Look at that beauty!

One of these days (if I remember, which I won’t), I’m going to weigh a batch of blades pre and post the grinding process.

Assorted thicknesses of 2, 3 and 4mm stock, all bevels ground and some tangs. I do wonder how much steel has actually been ground away.

@flod.uk are mates and fellow makers based at @portlandworks, they make cool stuff with glass and plastic taken from rivers around Sheffield ♻

I recently saw them forming some of their recycled plastics into sheet form; obviously, knife handles are never very far from my mind💡

A knock on their door the very next morning, followed by a few hours cutting, shaping and finishing, and the result is what you see here, one of my 4" kitchen parers, a cool little blade with the hot rolled steel finish retained to its flats and hand applied striations along the spine 🔨

It also now looks to be the first of a very exciting little range, I'd say watch this, and their, space 👀 taken in Portland Works by @stuartmitchellknives
