🔥🥩 HOW TO SMOKE A PICANHA LOW & SLOW! 🥩🔥 We’re taking this @swift__meats Picanha and turning it into a juicy, smoky, crispy-edged BAD BOY! 🔥 First things first… find that binder! 😏 I went with @heinz Mustard to get everything locked in! For seasoning, I went HIGH PROFILE with a Palestinian 🇵🇸-style Zaatar Mix from @adonisspices the flavor on this was absolutely GNARLY! And you know I LOVE saying… “when I choose my HEAT!” It’s just as important as choosing your seasoning! Today’s heat of choice: @fogocharcoal PREMIUM Hardwood Lump Charcoal! 🔥 🥩 THE METHOD: ➡️ 275°F — LOW & SLOW For the first 2 hours, I put the Picanha directly on the grate with the fat cap on top, letting that beautiful fat slowly render and melt down into the meat! After 2 hours, pull that bad boy off and let it rest for 15 minutes. Then comes another flavor bomb… a little Breakfast Sauce too from @bearandburtons for that extra kick! 🔥 Next, into a hotel pan to capture all those incredible juices, then back on the smoker for another 2 hours at 275°F. Now it’s time to CRANK IT UP! 💨🔥 I took the heat all the way up to 400–500°F and hit that Picanha for about 2 minutes per side to build that extra-solid, crispy crust!🔥 🎯 FINAL TEMP: 139.5°F That was the sweet spot for me a solid medium pull, juicy, tender, and loaded with flavor! 🥩🔥 Then let that bad boy REST ANOTHER 15 MINUTES before slicing! And make sure you have the right tools, because you can’t carve a masterpiece with the wrong equipment! 🔪 @jwsteelcrafts had the tools ready for the final slice!
