Some weeks back, I made the one with the peel, but today i’m blending without it. Unripe plantain swallow is simple, healthy, and so satisfying.
Method:
I peeled and sliced my plantains, then blended them till smooth.
Into a pot it goes, and I kept stirring till it came together nicely. Added little water and cooked on low heat for about 10 minutes to get a soft and stretchy swallow.
Honestly, if you’re trying to switch things up from the usual, this is one to try.

Moi moi cooks best with steam, and this trick works every time.
Soft. Firm. Never soggy.

Save this for your next moimoi

The little extra step that takes my moi moi to another level!Flavor-packed moimoi made with peppers, onions and garlic fried in a little oil before blending with peeled beans, crayfish, extra onions and meat stock.

Seasoned to taste, added vegetable oil and deboned oven-roasted hake fish, wrapped in moimoi leaves and steamed over the fire.

The flavour? The aroma? The pairing? Simply delicious! by @sumboskitchen

Monday and Tuesday, the energy is high. You have plans, goals, and many things you want to achieve.

By Wednesday, you’re beginning to question that same energy. Thursday, you’re consoling yourself that Friday is almost here!

And honestly, this applies to work, business, motherhood, and even cooking.

Sometimes, we just need to make things easier for ourselves.

Meanwhile, school lunch must be ready, so we’re keeping this one really simple. Rice and beans with stew made the night before.

Please tell me I’m not the only one whose energy starts dropping by Wednesday! 😂

Whoever said homemade pap was easy probably wasn’t the one doing the sieving! 😭

After all that stress, I looked at the quantity I got and almost regretted starting the process. Only for me to check the next morning and discover that plenty of pap had settled at the bottom of the bucket after i let the fermented strained water to rest.

Which part of making pap do you find the most stressful? Because for me, it’s definitely the sieving!

Forgot to defrost the Pepper mix, but Sunday jollof rice must happen! Sometimes, you just have to improvise.

How do handle your frozen ingredients when you forgot to bring them out ahead of time? Let’s learn from one another.

Ekuru is a traditional Yoruba dish made from peeled, blended beans and steamed until cooked. Unlike moi moi, which is usually seasoned before steaming, Ekuru is traditionally prepared plain and enjoyed with a spicy pepper sauce, often made with plenty of onions and your choice of proteins.
For proper Ekuru, all you need for the beans is water before blending. No peppers, onions or salt before steaming. Keep the tomatoes out of the sauce too, and let the peppers, onions and proteins do their thing!
You can make the sauce as rich as you like or simply use whatever you have available.

Have you tried Ekuru before?

Sweet potatoes boiled with salt for a few minutes then popped it in the oven to roast lightly, just enough to get it dry and roasted without burning. Paired it with smoked-fish egg sauce.

Dear September, thank you for ending on such a good note. 🤎

Have you ever combined unripe plantain and sweet potato in a pottage? If you haven’t, this is your sign!. The sweet potato adds just the right amount of natural sweetness to the plantain, making it more delicious.
This meal is nutritious, easy to make, and very satisfying.
