For years, protein has been the nutrient dominating headlines. But increasingly, nutrition experts are turning their attention to something many of us still don't get enough of: fibre.Fibre does much more than support digestion. It helps nourish the beneficial bacteria in our gut, contributes to feeling satisfied after meals and plays an important role in a balanced diet.The good news is that some of the best sources are simple, everyday foods.Chia seeds contain around 34% fibre, while flax seeds provide around 27%, making them some of the richest natural sources available. Tomato & Basil Thickened Soup (milled chia boost)Warm, rich, and naturally thickened.Ingredients:1 tbsp olive oil1 onion, chopped2 garlic cloves, chopped1 tin chopped tomatoes300 ml vegetable stock1 tsp milled chia seedsHandful fresh basilSalt & pepperMethod:Sauté onion and garlic in olive oil until soft. Add tomatoes and stock, simmer for 10–15 mins. Stir in milled chia seeds and cook for another 2–3 mins until slightly thickened. Blend if desired, then finish with basil.2.
