Thick cut porch chops from ALDI USA brined with salt, sugar, and Chef Bear's All Purpose. Grilled at 4 minutes a side and rested for 10.

Always pushing... always learning.

New way to spatchcock, it's called frogging. Cut down the cavity avoiding the drums untill you reach the bones in the back. Flip it and press flat. When you cook it, you get the benefit of the bones protecting the meat and if you use our technique of low and slow for an hour, you get great crispy skin.

Rainy Tuesday so Nets and I are going to cook all day.

Starting off, we're using dill from our garden for some really simple pickles. She doesn't luke her pickles to be 'all Cheffed up' so I did as she asked.

Next, we made room in the freezer from last years pepper crop and made Oso En Fuego pepper relish (this'n got cheffed up real good).

Marinating flat irons for dinner, and we're coming up on libation time. I'm having the best day..
