Everything I was craving on a plate. Mediterranean flavors. Is it authentic? It’s authentically me and that’s good enough.

Grilled shrimp, rice, a salad with champagne vinaigrette, and tzatziki sauce.

I can’t tell you the last time I had a meal as healthy as this. When you’ve been moving and shaking so much, cooking gets put on the back burner. I’ve been consistently working out and it’s time I started incorporating more home cooked meals and less Javier’s.

What are your dinner cravings? by @sundaydinner_mp

You know you need to make this Chicken Katsu for dinner right?

It’s basically a giant chicken nugget the way the kitchen was smelling. Prep and cook time is quick. This took no longer than 30 minutes including the rice and spicy sesame slaw.

I used a recipe found online as a guide for the chicken. If you want to try the spicy slaw, look no further.

1/2 Cabbage thinly sliced
1 Serrano Pepper sliced
3 Green Onions chopped
1/4 cup Rice Vinegar
2 Tbs Toasted Sesame Oil
1 tsp Soy Sauce or Salt to taste
1 tsb Honey
1/2 tbs Black Sesame Seeds

In a bowl whisk together all of the wet ingredients. Add in the peppers and green onions then allow it to rest for 5 minutes. Give it a mix after it’s rested and it should be spicy! Add in the cabbage and coat each piece. Don’t be afraid to use your hands and massage the dressing into the leaves. Let it sit at least 10 minutes before serving. by @sundaydinner_mp

Adobo Chicken Wings are a must this year! Tap into your inner Filipino 🇵🇭 for this one.

What you need:
2 packs of chicken wings
2/3 cup soy sauce
2/3 cup distilled vinegar
1 head of garlic minced
2 bay leaves
2 tbs black peppercorn
2 tbs brown sugar
1/2 tbs onion powder
1/2 cup Corn starch
2 green onions sliced thinly

How to make it:
Clean and dry your chicken (Don’t argue with me). In a large bowl, combine soy sauce, vinegar, garlic, peppercorns, bay leaves, and brown sugar. Stir until the sugar is combined. Marinate the chicken wings in the mixture for at least an hour or overnight.

When you’re ready to cook, preheat your oven to 400 degrees (I set my oven to roast @ 400, if you don’t have that option use the convection setting). Remove the chicken from the marinade and pat it dry. Heat the marinade in a saucepan and reduce until the liquid is about half. Sprinkle the onion powder and a light sprinkle of salt and give it a good mix then add in the cornstarch and mix again. Place the wings onto a baking sheet lined with parchment paper and roast for about 20-25 minutes flipping about halfway through and brushing the marinade over the chicken until you achieve your desired crispness.

To serve, plate the wings, spoon the remaining sauce over them and sprinkle with some green onion razzle dazzle. Don’t forget the rice….. by @sundaydinner_mp

Fresh gnocchi is a labor of love and I wouldn’t have it any other way. These bad boys were so soft and pillowy. The sauce was so easy and delicious. I added Italian sausage for some “protein” lol don’t come for me.

Gnocchi:
2 russet potatoes
1 cup 00 flour
3 eggs
1 tsp salt

Vodka sauce:
1/2 Sweet onion minced
6 garlic cloves minced
1 Tbs tomato paste
16 oz crushed tomatoes
1/2 cup vodka
1/2 cup cream
1/2 cup Parmesan
1 tsp Calabrian chilies
Salt & Pepper to taste
Optional :
Italian sausage & Burrata cheese

How to make it:
Boil potatoes until tender then let cool and peel. Press potatoes through a sieve then added flour, salt, and eggs and knead the dough. If it feels too loose, add a little flour. Roll the dough into thin logs and cut into .5 inch pieces. Use your thumb to roll the pieces against a fork to create ridges or just skip it and throw them straight into salted boiling water. They are done once they float.

For the sauce, heat a pan on medium heat and coat it with oil. Sauté onions for 3-5 minutes or until translucent then add garlic. When it’s fragrant, about 3 minutes, stir in the tomato paste. Mine was frozen so I mixed it until it was throughly defrosted. Add the vodka to deglaze the pan. I added the crushed tomatoes first because I forgot but it didn’t make too much of a difference. Turn heat to low and allow the sauce to simmer for 15-20 minutes.

At this point I added salt and pepper to taste as well as Calabrian chilies. Then add the cream and mix that in before the cheese. If you like it cheesy then add more cheese. If you Ike it less cheesy, use less. The choice is yours. I added some pasta water to loosen the sauce up a bit because it got a little thick at the end.

I then added the sauce to a pan along with the sausage and gnocchi to get the sauce fully coated and all the flavor absorbed. Top with burrata cheese and enjoy.

What’s up fam! So I made this s’more pie for the first time for Maxx’s birthday. Ever since I made key lime pie, he’s been saying you should make one with chocolate and marshmallows, and several other ideas. I finally made it. It was everything I envisioned.

I wanted the filling to be smooth and decadent like a crème brûlée. The texture was perfect! It was so creamy and velvety. It tasted like a sophisticated s’more. The graham cracker crust was buttery and the toasted marshmallow’s were the best! I like mine burnt and crisp on the outside and super gooey in the center. If y’all like lightened marshmallows that’s your business.

This pie was a hit; all glory to God! I can’t wait to make it again and perfect it! by @sundaydinner_mp

This time, let’s Make Dinner with Maxx.

Wow! He did an amazing job. I’ve made this pasta sauce several times over the years and idk what compelled him to want to make it on his own but I’m so happy he did.

One of my favorite things to do is cook, and it’s even better when we tag team. He usually helps with the little things like cleaning the produce, or the dishes, and moving things around in the pan just to touch it.

I can’t even tell you how happy I was to see him replicate the thing I love most (cooking) and embracing it and making his own way in the kitchen. I know he loves when I cook and he watches but, I didn’t know he watches this closely! The closer I’ve been getting to God the more he’s been revealing to me that when we put into practice his teachings, that we will have peace. When I’m in the kitchen, I have peace. Seeing the person God put into my life also cooking brings me so much joy and happiness. I can’t thank God enough for these moments.

He can finally live up to being the head chef (as he calls himself) and the main chef (me, the real head chef). 🧑🏻‍🍳👩🏾‍🍳

Thank you for being so observant and giving me a break from preparing dinner. It was truly a delicious treat that I will cherish. 😘

One thing about me…I’m gonna make some tacos. It’s not often we get the chance to make fish in the house (not a fan favorite). When the fam is away, I get to play!

Tacoooos!!! My favorite thing to eat pair with seafood! Another favorite of mine. A match made in heaven. by @sundaydinner_mp

The kitchen is my happy place. It’s where I can be creative. A place where I can experiment with different flavors. It’s also a place that brings people together. A place where families create memories. Where friends gather to enjoy each others company.

My passion for cooking isn’t simply just cooking the meal. It’s the fact that something I created can be the glue that brings people together and create something memorable.

A gift that is God given can never go unnoticed. So, lobster and bucatini it is. I made a miso cream sauce and pan seared the lobster with love and lemons to create this stunning dish. by @sundaydinner_mp

Dinner is served. Keepin it easy and classy with pan fried chicken breast, risotto, and sautéed spinach.

Fun fact: My mom used to make spinach with minced garlic and I’m pretty sure a little sugar or something sweet. I used to pretend I didn’t like it but secretly it was one of my favorite things to eat. Now here I am, making it every time I need something green because it’s quick, easy, and delicious. by @sundaydinner_mp
