For Valentine’s Day, I made a squid ink lobster ricotta raviolo with egg

I’ve always been afraid of making pasta by hand, but I have more confidence now that I won’t screw it up. I know I need a pasta machine though to get the pasta thinner. Definitely want to try again soon!

24 hour sous vide American wagyu Korean short rib with daikon braised in lobster dashi and sushi rice on top of endive washed in ponzu dressing, accompanied by charred pearl onions with BBQ glaze, seasoned squid, and pickled garlic stems, served with a gochujang truffle aioli.
