Caldo de Queso
Servings: 4–6 | Prep: 15 min | Cook: 30 min | Total: 45 min

Ingredients

Caldo

2 lbs Yukon Gold or russet potatoes, peeled and cut into 1-inch chunks
4 Anaheim chiles, charred, peeled, seeded, and sliced
½ white onion, chunked
4 garlic cloves
2 Roma tomatoes, chunked
½ cup milk
4½ cups chicken broth
3 tbsp Mazola Avocado Oil
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp dried oregano
Salt, to taste

Cheese

12 oz panela cheese, cubed

For Serving

Warm corn tortillas
Fresh cilantro
Lime wedges
Directions
Char Anaheim chiles over an open flame or under a broiler until blistered. Place in a covered bowl for 10 minutes, then peel, seed, and slice into strips.
Heat 1½ tbsp oil in a large pot over medium-high heat. Cook onion, garlic, and tomatoes for 6–8 minutes. Transfer to a blender with 1 cup broth and blend until smooth.
In the same pot, heat remaining oil. Add potatoes and cook 4–5 minutes until lightly golden.
Pour blended mixture over potatoes. Add remaining broth, garlic powder, onion powder, salt, and pepper. Bring to a gentle simmer, cover, and cook 12–15 minutes, or until potatoes are tender.
Reduce heat to low. Slowly stir in milk (do not boil). Add chile strips and oregano. Adjust seasoning as needed.
Gently add panela cheese cubes and let sit undisturbed in the hot broth for 2–3 minutes.
Serve hot with corn tortillas, cilantro, and lime wedges.
