Celebrated my Dads birthday in Texas with my family from Philly! We had an amazing weekend filled with great food, activities, and more. We all grew up together and moved away so I cherish these moments so much! Thank you to the family that came out to surprise my dad!

When it comes to Asian food I’m stuffing my face with extra veggies please!

We celebrated my cousin in laws bday with a fish! & had pun pa fish wraps with a whole bunch of goodies!

It was nice to be with family and have Lao food because I don’t make this on my own. Overall we ate good and thank goodness I stayed active and moved my body because I stuffed my face with as much Lao food as possible.

But now we are back to high protein meals and eating clean and healthy habits! 😛 by @suritakhamphong

When you visit your parents and they feed you good!
It’s been a minute since I had khaopoon a red curry Lao chicken noodle soup! & I got excited to get my fix in!

Spicy, savory, full of umami and veggies and spice! I like the pepper skewers haha! 🌶️

Ground chicken but make it Lao style baby! I’m just using up what I had. You can add any extra protein you had but this is what I’m working with! Easy salad to store in the fridge, or meal prep!

You can eat with rice, cabbage, lettuce or whatever herbs you like!
I also boil eggs and have a few to sneak in extra protein! But one of my favorite Lao dishes to have for meal prep! Super quick & easy to make.

Ground chicken I sautéed with garlic & added a little knorr seasoning powder then added all of the herbs with the seasonings! Mix and adjust how you Iike it! You can also add basil, Parilla leaves, or whatever herbs your heart desires!

Ingredients

Key Limes/ Regular lime
Shallots
Cilantro
Mint
Green onion
Cilantro
Culantro
Toasted rice powder
Thai Chili peppers + dry
Padek ( Fermented Fish sauce)
Fish sauce
Knorr (chicken powder) for chicken
Serve with lettuce, cucumbers, or any veggies you like!
