Il n’y a pas d’école pour la hot sauce, alors j’ai fait le livre que j’aurais aimé trouver quand j’ai commencé à m’y intéresser.

Pour vous faire gagner du temps.

C’est le recueil de beaucoup de choses que j’ai apprises par moi-même, à force de recherches, de discussions, de prototypes… À force de faire de la sauce piquante.

Un socle solide, qui rassemble un large éventail des préparations piquantes du monde entier, de l’antique llajua des Andes à l’huile rouge du Sichuan, des bayous impénétrables de la Louisiane jusqu’aux falaises de Ténériffe ; Il donne un aperçu mondial de cet univers très divers, uni par le piment.

From outer space et au delà

Wild myrtilles, madame Jeanette peppers van Bruxelles, green apples, Sichuan pepper, and gingembre.

Sortie for the first time en 2021, it’s one of the sauces piquantes we are most often asked for, mais we only make it en season, at the end of l’été, and the difference is énorme.

The major difference with those of our competitors is that we do not use fruit puree (ever), nor any sucre, but whole wild myrtilles.

An amazing color and a tangy yet sweet aroma, carried by the power of the madame Jeanette pepper.

It’s the perfect sauce to accompany a plateau de fromage, steamed legumes, white meats, or to add to a cocktail ou dans un yogurt… It is strangely à l’aise everywhere malgré its WTF appearance. taken in Purps by @swetbxl

TASTES LIKE SUMMER

Amba is a modern take on a classic condiment that originated in India and is hugely popular across the Middle East.

Made with mangoes that we pickle ourselves, yellow Habanero peppers, fresh turmeric, and hand-crushed fenugreek, it’s tangy, lightly sweet, and relatively mild in heat.

This makes it perfect alongside hummus or falafel, and obviously ideal for seasoning shawarma or kebab.

Beyond its traditional use in Middle Eastern cuisine, Amba is a whole new flavor: Like in a well-executed curry, the blend of different aromas creates a new and unique taste that you’ll want to try on everything.
It’s so addictive that we went ahead and turned it into a limited edition hot sauce.
