Shrimp, melted cheese, crispy tortilla 🦐🧀

Gobernador-style shrimp tacos griddled until the cheese crisps at the edges, then pulled apart nice and stretchy. Would you add salsa or eat it as is?

Stealing a mixiote wrapper is now a crime in Tlaxcala. 🌵📜

Real mixiote isn't parchment — it's the thin skin peeled off a maguey leaf (Náhuatl metl + xiotl). Unauthorized peeling dries the plant and kills the aguamiel that becomes pulque. In March 2025 Tlaxcala's Congress unanimously tipified maguey theft and unauthorized desmixiotado as a specific crime (Congreso de Tlaxcala / ABC Tlaxcala).

That's why most mixiotes you buy today steam in a paper or plastic bag — carnero or pollo in adobo, same Sunday energy.

Maguey skin or paper bag — can you taste it? 👇
