✨Snuck into the friends & family night at the gorgeous new spot @terukonyc inside Hotel Chelsea—and wow, what a glow-up! The space has stories to tell, and now it’s telling new ones (with seriously good food + next-level cocktails). 🥃Awamori in a cocktail? Yes please @dadpunkvibes . Big cheers to the dream team—can’t wait to be back for that whisky bar magic!

Congratulations to the team behind my #bestrestaurantintheuniverse @sunday.hospitality @sundayinbrooklyn @thirdsbk @alandsman @toddenany @jaimeyoung14 @geopad @2le_jt 🥂

Our Clams Sakamushi is a Chef @2le_jt favorite. Sake-steamed with garlic chives and fresno chili, it’s the perfect balance of warmth and spice.

As Chef JT puts it: “The beauty of this dish lies in its simplicity — it’s not the simplest, but if stripped down, it’s all about the clams and the sake dashi (sake and kombu), both packed with umami. The key is in the technique: cooking the clams just until they open, never over-boiling so they stay plump and tender. Then, plating them immediately with shells facing upward, ensuring each one cradles the delicate broth when poured.”

As I sit looking at these photos and reading your messages, my heart is filled with gratitude for each and every one of you. As I look to the future, I am filled with excitement (not just cheese, Chessuschrist) for all that awaits us, I am not afraid, I am in my comfort zone, I have my tribe, and I feel truly lucky, want to hug you and have a hug from each and every one of you.
I DO NOT THINK about leaving my comfort zone, I just want to expand it, I am very comfortable.
It was worth it to take a shower for you.
It was one of those days when I wanted to stop time, or at least put it in slow motion so I could dedicate myself to you and the details. The art is in the details.
We love you all.

September was a whirlwind—so much happened. I was busier than a barefoot boy on an anthill for most of the month but managed to downshift a bit towards the end. All in all, it was a month filled with education, travel, friends, and family.

Here's a quick photographic recap of whom I met, where I went, and what I did.

1. Many Paths Up the Mountain is a delicious Mark Mentzel cocktail at Order of the Ace.
2. Maotai, the legendary baijiu, was featured at many events when I was in China for Spirits Selection.
3. Even though I was in China to judge spirits, there was no paucity of education. I learned a ton.
4. Back in the US a short time later, I participated in a great event at Service Bar in DC, and I got to hang with Graeson Cully again. Were your ears ringing, Ash?
5. Had lunch with Dave Markowitz in Baltimore. I always look forward to hanging with him.
6. Bumped up to State Line Liquors where Joe Buchter helped me talk moldy spirits with his amazing customers. Education is my favorite part of what I do, so this was a treat.
7. Thank you, Carolina, for helping me assemble this partial Takamine Whiskey vertical at Rule of Thirds.
8. Completely by chance, I ran into my friend from college at Sake Bar Hagi. We hadn't met in 24 years. So good to reconnect with you, Laura!
9. Family time in VT. Nothing better.
10. The final big event of the month was the one year anniversary party of Koharu Usui's phenomenal Shochu Sunday, entitled Snack Koharu. So good.

And now on to the next city—Atlanta and Austin are in my near future.

Kanpai!
