Last week, I worked my final shift at Hiroki-San in the Book Tower. Leaving was not an easy decision, especially since I was the second person ever hired for the restaurant. Over the years, I’ve had the privilege of working alongside so many incredibly talented and brilliant people, and those memories will stay with me forever. I want to extend a heartfelt thank you to every single person I’ve worked with at Hiroki-San. Together, we built something truly special, and I’m proud of what we accomplished. A special shoutout goes to @southwest_sushiiboii not just for being one of the best chefs in the game, but being an even better friend. I didn’t even eat raw sushi before working with him. He told me, “You can’t hold the team accountable if you don’t know what it tastes like,” and I’ve been hooked ever since. After four years and two successful restaurant openings together, it’s tough not having you in the kitchen, bro. Wishing everyone at Hiroki-San and in the Book Tower all the best in the future. I’ll definitely be back to visit everyone soon!
