Sometimes a bagel just wants to be a bagel. It always comes back to basics. Quality ingredients, traditional techniques, and taking the time to do things right. The journey often brings you back to where you started but with a deeper understanding and appreciation of where you are.

Come definisci una grande pizzeria? How do you define a great pizzeria? I posed this question to some highly regarded friends recently. Of course the quality of the pizza itself is a priority, but in this new Golden Age of Pizza we have to look beyond just the pizza itself. We must consider all of the details that distinguish the extraordinary from the simply good. When you enter Truly Pizza or Tony’s Pizza Napoletana @tonyspizza415 or Pizzeria Sei @pizzeria.sei you can see and feel a heightened connection between the guests, the staff and the food itself. Driven by an understanding that by opening our doors to the public we accept a responsibility to continually improve the complete experience great pizzerias are not merely preserving the ashes of tradition. They feed the flame that is at the heart of our craft inspiring others to strive for excellence.

When you surround yourself with talented, committed, creative people great things happen. My incredible partners Michael, Chris, Donna and Emily have hit another home run. Truly Gelato, Dana Point brings the same passion for excellence to gelato that Truly Pizza delivers with its pizza. I’m so proud of what we are building together. Wait until you see what’s next.

I can’t wait for @truly.gelato to open in early July - Michael has really put his heart and soul into this labor of love. Donna has created a beautiful jewel box of a space. Chris added his signature dedication to excellence and as always Emily worked tirelessly to source the little details that are going to make this gorgeous shop a destination that exemplifies the Truly commitment to uncompromising quality. Dayna and Ted our incredible design partners have once again turned the vision into reality. It’s located just a few steps away from Truly Pizza Dana Point so if you’re considering a trip to the beach this summer don’t miss it. Truly Pizza,, Truly Gelato, truly special.
