These gooey, rich, chocolaty brownies are amazing and totally vegan 🙌 I use my Thermomix because it's all done in 1 bowl meaning less washing up. Thermomix also controls the temperature meaning no overheated chocolate 🙌

If you have a Thermomix this is an adaptation of the Cookidoo "Vegan Brownies" recipe:

1. Line a 20cm square tin with baking paper. Preheat an oven to 160°C fan.

2. Grind Flax Seeds 10-20 seconds/speed 10 (I usually do a whole bag and then freeze them). Mix 2Tbsp ground flax seed with 6Tbsp water and set aside.

3. Place 100g Pecans in TM bowl. Chop 1 Second/speed 5. Set aside.

4. Place 190g vegan chocolate in TM bowl. Chop 2-3 seconds/ speed 6 for rough chop. Set aside with pecans.

5. Weigh 150g flour + 0.25tsp salt + 0.25tsp bicarbonate of soda. Mix 5 seconds / speed 3. Set aside.

6. Weigh 210g chocolate in TM bowl. Chop 8 seconds/ speed 8. Add 120g Coconut Oil. Melt 1minute 30seconds/ 50°C/ speed 2.

7. Add 160g Soft Dark Brown Sugar + 80g water + flaxseed mix + flour mix + 1.5tsp vanilla extract. Mix 30seconds/ speed 4. Scrape down bowl.

8. Add chopped nuts and chocolate. Mix 10seconds/ speed 4. Transfer into lined tin and smooth the top.

9. Bake 23-25mins @ 160°C fan oven. Leave to cool and set in tin for 2 hours before cutting.

We wanted to make our gluten free banana bread a little bit different, so we did a twist on a classic banoffee pie. Add some vegan whipped cream, bananas and toffee sauce and you've got a banana banoffee cake 😋⁠

Weekend incoming! We haven’t made protein French toast in a while and this is one of our favourite recipes by @_hannahheats 🍞 #LiveUnbeatable ⁠

INGREDIENTS⁠
2 slices of bread,⁠
100ml @twochicksproducts egg whites⁠
1/2 scoop chocolate protein powder⁠
100ml water⁠
Optional extras: peanut butter or berries as pictured⁠
⁠
METHOD⁠
1. Mix the water, protein powder and egg whites together⁠
2. Soak the bread in the mixture⁠
3. Heat up a non stick pan with a 1tsp of coconut oil or equivalent on a high heat⁠
4. Cook the bread in both sides for around 3 minutes.⁠
Voila!⁠

SEAFOOD LUNCH @cuttlefishoxford 🦪🦐🐚
A cosy seafood joint in Oxford 😍

I had the pleasure of spending a long weekend in Oxford last weekend with my family and we popped by this cute seafood restaurant next to the bnb we stayed called @cuttlefishoxford 😍
We ordered a variety of dishes to try and all were fantastic. Lots of options to choose from which is great, and I particularly enjoyed my shellfish hotpot. The staff were also so lovely and welcoming 🤩
We wanted to try their lobster but it was a shame they didn’t have any at the time so next time we head back I’ll be sure to try it and let you know 👀

💖What we had:
Creamy garlic scallops
Fresh oysters with vinegrette
Surf and turf ~ beef sirloin + king prawns
Mussels and clam hotpot
English breakfast
