Last time I was back home in Mississippi, I filled up some water straight from my family’s well and carried it back with me to Atlanta. I’ve always believed food tastes a little different when it’s made with water from home. Maybe it’s the minerals in that Mississippi ground. Maybe it’s nostalgia. Maybe it’s generations of Southern cooking talking. Whatever it is, there’s something in that water.

So when the craving hit, I pulled out the family recipe, brought out that Mississippi well water, and got in the kitchen.

This time, I believe I nailed it.

I started with a proper hen from a specialty market… the kind with enough flavor and richness to actually stand up in a dish like this. I built the dressing with a deeply seasoned broth, plenty of herbs, black pepper, a little heat, and all those savory flavors that ought to be in a pan of old-school Southern dressing.

And that steam rolling off the top? That pan had barely cleared the oven before I cut into it. I knew I was supposed to let it rest, but sometimes a man has to handle his business.

First bite told me everything I needed to know.

Rich. Moist. Savory. Herbaceous. A little spicy. Deep chicken flavor running all the way through it, with that golden top giving way to soft, seasoned dressing underneath.

To me, this is Soul food cooking at its best: humble ingredients, serious technique, and generations of flavor in one pan.Consider this my opening course for fall. Cooler weather, football on the television, something good simmering on the stove, and a table full of food that’ll make you loosen your belt before dessert ever shows up.

And I’ll always give credit where it belongs. This recipe comes from my family in Mississippi. I may have refined my own version, but the soul of it belongs to them.

Mississippi raised the recipe.

Atlanta just got the plate.

Now let me go back and get another helping.

Happy 2nd birthday, my boy! It’s hard to believe two whole years have passed since the day you came into this world and changed me and your mom’s life forever. From the moment I held you in my arms, I felt unconditional love for you.

Watching you grow over these past two years has been amazing. Your smile is infectious , and your curiosity inspires me to see the world through new eyes. Whether you’re running around the house full of energy, asking for a snack, or fighting bedtime you remind me what really matters in life.

You’ve taught me some many things in these short two years. You’ve shown me how to slow down, how to find joy in the smallest things, and how strong and patient love can be. You are kind, brave, smart, and silly—and every single day, I’m proud to be your “DaDa”.

I have an infinite number of reasons to be happy. Last weekend, I experienced a few of them with some of my favorite people.

I had an amazing time celebrating Mr. and Mrs. Fountain and reconnecting with friends. Love was definitely in the air. All I got was pollen though.
