THIS ESCALATED QUICKLY.

A street full of people.
Some completely ridiculous bottles.
Zero reason to go home.

Just where I belong. ;)

Bleibt gespannt. 👀

We are headed back to Champagne in two weeks!

It has become a pilgrimage we look forward to taking at least once a year, so that we stay connected to the people and the place that inspire us and the program @nouvellewine

This year we have the immense privilege to experience the harvest with some of our closest friends welcoming us into their homes for few days - @champagne_mousse @champagnegeoffroy @maisongamet @champagne.seleque @champagne_pierre_paillard @domaine_abergere @bereche_champagne_officiel

Last night we popped one of my absolutely favorite vineyards / cuvées ever “Le Cran” 2012 from @raphabereche out our cellar. It was absolutely stunning, developing perfectly with age, showcasing pure elegance and depth! The wine reminded me why I preach that Champagne is not just the greatest wine in the world but simply put - THE GREATEST BEVERAGE IN THE WORLD!

I am deeply passionate about this region which has largely consumed the majority of my personal & professional life for the last 10 years! It is at the center of so many dear friendships, magical memories, Incroyable culinary journeys, as well as shaping my career and the mission @nouvelle

Can’t wait to take in all the energy of the 2026 vintage, dine @assiettechampenoise & hopefully experience a bit of cochelet 😎

𝗖𝗵𝗮𝗿𝗹𝗲𝘀 𝗗𝘂𝗳𝗼𝘂𝗿 - 𝗕𝗶𝘀𝘁𝗿ø𝘁𝗮𝗴𝗲 𝗕.𝟮𝟬
Pure primary fruit with a deep oxidative edge. Saline and intensely grower-vibe, showing crisp apple notes wrapped in a remarkable fruit depth. Complex, characterful, and unmistakably tasty. 92 pts.

𝗖𝗵𝗮𝗺𝗽𝗮𝗴𝗻𝗲 𝗖𝗼𝘀𝗲 - 𝗖𝗠𝗬 𝗥𝟮𝟯 𝗣𝗲𝗿𝘀𝗲𝘃𝗮𝗹
Mineral-driven with crisp green apples and a distinctive wet chalk character. Yellow apple and quince add depth, while the palate remains precise and tightly focused. Bright, well-judged acidity carries through to a soft, elegant finish. 91 pts.
𝘌𝘯𝘫𝘰𝘺𝘦𝘥 𝘢𝘵 @manzavinbar

𝗚𝗮𝗻𝗲𝘃𝗮𝘁 - 𝗠𝗼𝗻𝘁𝗳𝗲𝗿𝗿𝗮𝗻𝗱 𝗦𝗮𝘃𝗮𝗴𝗻𝗶𝗻 𝟮𝟬𝟮𝟬
Served blind by @estherlockhansen 🤞
Torn between Savagnin and Chenin.
Lovely racy acidity and pronounced salinity define this archetypal Savagnin. Beautifully balanced and understated in its expression, it delivers precision, elegance, and quiet complexity rather than sheer power. 92 pts.
𝘌𝘯𝘫𝘰𝘺𝘦𝘥 𝘢𝘵 @manzavinbar

𝗝𝗼𝘀𝗲𝗽𝗵 𝗗𝗼𝗿𝗯𝗼𝗻 - 𝗖𝘂𝘃é𝗲 𝗱𝗲𝘀 𝗠𝗼𝘆𝗻𝗲 𝟮𝟬𝟭𝟰
Tightly wound, linear and mineral with vibrant citrus, lime, and finger lime at its core. Quince adds depth, while subtle gunflint reduction and a saline edge create a precise, energetic finish, though a bit restrained expression. 90 pts.

Champagne Cose has arrived.

The best punk bands started in garages.

So does one of the most exciting new micro negoce project in Champagne.

Founded by Gil Conejo—an acclaimed oenologist who spent years at Champagne Geoffroy and consults for some of the region’s most respected growers—and Victor Allier, owner of the iconic Sacre Burger and Sacre Bistro, beloved meeting places for Champagne’s vignerons.

Rather than owning vineyards, Cosé partners each vintage with exceptional growers, selecting tiny parcels and crafting single-vineyard, single-varietal Champagnes in their micro-cellar in Chouilly.

Their first releases came from Domaine de Bichery, Roland Champion, and Bryan Marx, followed by collaborations with Flavien Nowack, Antoine Bouvet, and Thomas Perseval.

Now at Truff Le Pig 🥂🌼

A recap of my recent trip to Champagne in April.

Before kids I used to go 4-5 time a year but now I’m lucky if I get to go once a year. It’s been 3 years since my last Le Printemps des Champagnes and so happy to see how it’s grown! I couldn’t be happier to see not only more people interested in well made Champagne but also how many of them are of a younger generation! The energy and vibe is just incredible!

Best of all was catching up with old friends & producers!
