Gratitude

There are far too many people to thank for being there during this difficult time but I'd like to mention a few

@smittenbakery thank you for indulging me and just being there. The cupcakes and lemon poppy seed loaf were of course brilliant.

@strawmaggot for the absolutely yum banana bread and sending a whole extra one.

@a_madteaparty for that nourishing loaf, taking wonderful photos of the goodies and so much more.

Bumtchoonth Wagun — Quince stewed with Eggplants, a Kashmiri Pandit recipe.

Fry in hot mustard oil-
1 quince (sliced, peeled and cored)
2 Japanese eggplants
Get them nice and coloured, then remove from the pan

In a separate pan toast, then powder-
1.5 tbsp fennel seeds
2 tsp coriander seeds
To that add-
1 tsp ginger powder
1 tsp Kashmiri red chili pepper powder
0.5 tsp turmeric powder
Mix all the spice powders with some water to make a paste

In hot mustard oil add-
A pinch of hing (asafoetida)
2 cloves
1 green cardamom
1 Indian bay leaf
Add and fry the spice paste. Next, add-
2 tbsp yoghurt
Mix well, then add the fried quince and eggplant slices.

To that add-
2 green chillies, slit
Salt, to taste
Add enough water to cover the vegetables, cook on medium heat with the lid on till the quince is tender. Finish with-
0.5 tsp Garam Masala

Serve with rice, and a side of greens

Fermented Hot Sauce!
Inspired by posts from @a_madteaparty , trying my hand on my very own fermented hot sauce, been thinking abt it for long.

Sounds simple, just soak the chillies, garlic, veggies like onion and carrots in a brine solution and keep in a bottle for 4-5 days, then blend and use.

Have soaked it today, will wait to see how it turns out, stay tuned😃

@a_madteaparty and @kartikeyasinha have been working on this for quite some time and after many trips and trials we are pleased to announce "Lunch in the Garden".

To take advantage of this brief window in Delhi to dine outdoors and take in the winter sun (weather gods permitting), we are hosting a one day only pop up in a beautiful space in Aya Nagar at the offices of @psdastudio surrounded by nature. Take a respite from the concrete jungle, sit under the trees and enjoy a curated experience.

The menu is Mediterranean-inspired yet grounded in local and seasonal ingredients.

To further enhance this experience we have invited some friends along:

@decasa.in will be serving their amazing kombuchas. This is the most flavourful booch we have tasted.

@mrcrustworthy is making mini versions of his to-die-for Palmiers. Buttery yet light, you won't be able to have just one.

My sanity, serenity, and satisfaction through this Covid phase could be traced back to these three...
The fabulous weather and air of Ranikhet. That would include supportive friends, happy sounds and the genuine warmth embedded in the people around me.
The dogs. Minimum 4, maximum 8. Their cuddles, quiet presence, rowdy welcomes, ferocious jealousy, exhausted snores, and those love filled eyes and noses.
The cooking adventures. Sourdough bread and focaccia (eternally grateful @a_madteaparty), lemon/vanilla cake, green/red Thai curry. All this decadent cooking has settled in my mind, not in the tissues!
Other constants-- long walks, knitting, yoga, driving...they continue to sustain, continue to keep me steady, continue to make me smile.
Hold in to your blessings and good things... This too shall pass..

Wild yeast has become wildly popular during the pandemic. For years I’ve been following Anita Tikoo’s Instagram account @a_madteaparty chronicling her sourdough journey using lively wild yeast starter and local flours and other culinary experiments.🍞

A practicing landscape architect, she grows seasonal produce on her terrace garden that fuel the ferments in her kitchen. Tikoo conducts food workshops (presently online) where like-minded people join her in the kitchen on weekends.🍞

"The ingredients couldn’t be more basic -you need just flour, water, and salt. Yet, getting that perfect loaf of sourdough is more than simply following a recipe. Optimising the sourness and texture is complex.

It takes a lot of experience and mindfulness every time you bake. Most of us stay students forever, but maybe that’s what appeals. There is always something still left to learn, to discover, and to master."

And super content..I made all that I want with Lotus stems. This is the third time I made this. Kashmiri Nadur Yakhni from @a_madteaparty Anita's blog. Oh! how much I love her blog🙈. Again it is a mix of North and South(avakka). Yes yes I had all that lotus stems and more. Last of this years I guess. This recipe definitely stands out. Not like regular yoghurt based Kadhi or kozhambu. Thank you so much Anita for this and many more such recipes ❤️.
