Today is the first of a series I am calling, “Behind the dish.”
It is a glimpse into my mind from memory, to plate.

AUTUMN KALE CHAAT… The story behind the dish

I was ten years old, walking through the White Mountains with my mom.

Every fall, we’d make that trip. She loved the mountains. The crisp air. The colors. Just how beautiful everything was.

I remember walking through piles of brown, red, and green leaves, listening to them crunch beneath my boots. I loved that sound. I loved how it felt.

And somewhere in the distance, you could always smell a campfire.

I didn’t know it then, but those little moments would stay with me for the rest of my life.

Years later, on my second trip to India, I was sitting at Guru Krippa in Mumbai eating chaat.

And something happened.

That crunch. Those textures.

Suddenly, I was ten years old again, walking through the leaves with my mom.

I remember smiling.

When we started developing our new menu, I wanted to find a way to capture that feeling on a plate.

So we created Autumn Kale Chaat.

We fry kale in our pakora batter to recreate the crunch of those leaves. Cranberries bring a little sweet-tart pop. Cold-smoked sweet potatoes remind me of those distant campfires. Coconut dahi and ginger-tamarind chutney bring everything together.

Sweet. Sour. Spice. Salt. And totally vegan.

Everything I love about chaat.

But for me, this dish is about something much bigger than food.

It’s about how a single bite can take you somewhere you haven’t been in decades.

How something you eat halfway around the world can bring you right back home.

And how, sometimes, putting your fork into a plate of food can feel like stepping into a pile of autumn leaves with your mom all over again.

Autumn Kale Chaat.
Now on Menu 4.0 at Aatma at Widowmaker.

Harvest. Memory. Migration.

I don’t often stop to celebrate milestones. I’m usually thinking about what’s next, what needs fixing, or what I want to cook tomorrow.

But this one deserves a moment.

The Boston Globe gave Aatma at Widowmaker FIVE STARS, calling us “one of Boston’s best Indian restaurants, one of Boston’s best restaurants.”
This honor is not just five stars, it puts us in a category that blows my mind. There have been 7 restaurants to EVERY get 5 stars….. Now, @aatmaatwidowmaker is the 8th.

Growing up, my mom was terrified of driving into Boston. The traffic, the roads, getting lost. It was another world to us.

Now there’s a little restaurant in that city serving a cuisine we didn’t grow up with, from a country that changed my life.

And somehow, we earned five stars.

I wish she could see this. She’d be so proud. Not because of the stars, but because she knew how hard I fought to find my place in this world.

Building Aatma has cost me people, comfort, sleep, and sometimes myself. Behind the beautiful plates are financial stress, exhaustion, mistakes, and a voice in my head that still tells me I’m not good enough.

We’ve changed our menu FOUR FREAKING TIMES this year. Not because we’re lost, but because we know exactly what we’re chasing.

To honor the extraordinary diversity of Indian cuisine, the people who taught us, and the beautiful intersection of those traditions with New England. With respect and a little rebellion.

But here’s what matters most.

This isn’t MY five-star review. It’s OURS.

To my team: YOU built this. Every long shift, every dish washed, every detail nobody sees. You took something that lived in my head and made it real. I hope you understand what you’ve accomplished.

I wish Mom could walk into Aatma and see that the city she was once afraid to visit has become a place where her son belongs.

She’d probably smile, tell me I look tired, and ask if I’ve eaten.

Some things never change.

Thank you, Devra First, for seeing what we’re building.

And above all, thank you to my team.

Five stars. In Boston.

I still can’t believe I’m writing those words. ❤️

⭐️⭐️⭐️⭐️⭐️ - @bostonglobe

We are proud to share this glowing review from today's Boston Globe. Less than one year ago we opened the doors to @aatmaatwidowmaker and we could never imagined what year 1 would bring.

So proud of Chef @keithsarasin, The Aatma crew, and the Widowmaker crew who day in and day out bring their very best to deliver a great experience and have the ability to make thier vision a daily reality.

They don't give out six star reviews, we asked... they told us they don't really give out 5 star reviews either.

Tucked away at the very edge of Boston, @aatmaatwidowmaker in Brighton is not your typical Indian restaurant. Chef Keith Sarasin is cooking up some of the city’s most unique flavors while staying rooted in regional New England tradition, and the people are loving it.

If you want to avoid the line out the door, be sure to make a reservation like we did. We knew we had arrived once we reached the aromas of warm spices. The atmosphere of the restaurant itself is moody and chic—the perfect spot for a night out. They’ve got plenty of the delicious classics you’d expect, but also some more experimental dishes that we were eager to try. The butter chicken was perfectly rich and juicy and paired well with the soft and fluffy garlic naan. But for us, the two showstoppers were the Chili Paneer, which was the perfect balance of sweet and spicy, and the Aatma Burger, a unique take on traditional Indian flavors with an American twist.

If you feel like getting to know some of Boston’s best Indian cuisine, Aatma is the perfect place to go. With good value, great vibes, and rich flavor that lingers, I have a good feeling we’ll be dreaming of our next bite at Aatma for a while.

Have you seen the new mural within our walls in Brighton? No AI, no shortcuts, just supporting artists and giving them a place to create.

Our talented friends @positivestreetart brought this amazing piece to life and if you have seen it in person you know how vibrant and alive this piece really is. A true match of energy that our guests and team bring to the room on a daily basis.

A cosmic force, this mural shows the goddess Kali, her intense raw energy is on full display. This piece represents the destruction of ego, cutting away illusion, and the death of ignorance. The mirrors remain transparent so that you may find yourself immersed within this piece as we welcome you into our world.

We welcome you to join us today.

The most drool-worthy meal!!

This Brighton restaurant is adding a wonderful spin on Indian cuisine and you absolutely need to check them out! They’re got a stocked menu with such unique Indian-inspired dishes that are out of this world! I loved the old flavors of all of the dishes, but my favorite was the patra ni machi fried fish that was perfectly seasoned and you cannot miss out on their chaat-er tots seasoned to perfection!

We also got their famous Aatma burger, chicken 69 sandwich (super saucy and delicious!), benne dosa, egg salad Parsi style and of course some mango lassis! The New England gulag jamun is also the perfect sweet treat to end the meal!
