Sourdough apple cinnamon babka.
Forgot to set timer, lost track of time (Netflix, of course, was the culprit😆) and, of course, rewarded with thick crispy crust😅
Filling inspired by @sallysbakeblog
Apple filling
1-2 large apple (I used granny smith) peeled, cored and sliced thinly
1/2 tsp lemon juice
1 tsp unsalted butter
Lightly cook the apple with lemon juice and butter until just softened.
Drain and leave aside to cool.
Cinnamon filling
20g unsalted butter
80g brown sugar
25g all purpose flour
1 1/2 tsp cinnamon powder
1 tsp vanilla extract
Pinch of salt
Melt butter, add all the ingredients and mix to a soft paste. Cool before use.
For 1 loaf of 20x11x11cm pan
Sweet stiff starter
50g starter
50g bread flour
25g water
10g sugar
Mix and leave to triple 5-8 hours at 28-30C
Final dough
All stiff starter from the above
180g bread flour
45g sugar
1 large egg
50g butter
35-45g fresh milk
Zest from 1 orange
2g salt
Mix all ingredients except butter in stand mixer until it gathers into a ball. Optimal dough temp 24-26C.
Add butter and knead at medium speed until smooth and shiny. Check window pane (see my highlights) Keep dough temperature about 24-26C.
Leave to proof in a greased bowl, covered. Do 2 stretch and fold at 1 hour interval. Bulk 8-10 hours at 18-24C to triple.
Punch down the dough. Preshape into a ball.
Bench for 10-15 mins
Roll out into a rectangle.
Spread cinnamon filling and then apple filling.
Roll into a log. Shape into an ‘8’ and place in greased pan.
Pan size - 20x11x11 cm
Cover and proof at 27-30C until the dough is almost the height of pan. Egg wash.
Bake for 10mins at 180C and 25-35 mins at 170C or until golden brown.
Remove it from oven and out of pan. Cool completely before slicing.

A *beautiful* ball on a *beautiful* shall! Just kidding, it’s actually a throw! True, I’m an artist. True, I love detail. Curveball ahead! This incredible crocheted throw is not a work of mine. It’s a piece created by my best friend, Andrew. He’s a badass programmer, amazing gardener, and -you guessed it- artist of the fiber arts! I surround myself with people who are true to themselves, know exactly who they are, and own their unique abilities, talents, and hobbies. Like those of us here who take pictures every day with things that make us happy inside! Andrew ( @agbert1968 ) is a rockstar and his pieces are glorious. I’ll post again with some of this other works as they grow! - And that’s the BOUNCY BALL OF THE DAY!! - Follow me on this *colorful* journey as I battle Lupus/SLE & paint the world! #BouncyBalls #SuperBalls #Lupus #SLE #Chronic #Artsy #Collections #Colorful #Plushies #InstaPet #LupusWarrior #Toys #PicOfTheDay #CatsOfInstagram #Puppy #ArtistsOnInstagram #FollowMe #Photography #Stuffies #PetsOfInstagram #ColorTherapy #DogsOfInstagram #InstaArt #TravelingToys #Knitting #PhotoOfTheDay #InstaDaily #BestOfTheDay #Crochet #BestFriends
