Some wines tell the story of a place. Others of a vintage, an encounter, the time it took to become what they are. In the tastings led by Rino Billia, keeper of Bellevue’s wines, every bottle is the beginning of a story. Down in the cellar, guests are guided through regions, grape varieties, producers and vintages, following pairings, affinities and the occasional surprise. Rino knows the stories behind every label and knows how to tell them with the kind of discretion that always leaves the final word to the wine. More than a tasting, a journey. To be taken one glass at a time.

At Le Petit, before tasting, we observe. The shape, the texture, an irregular surface, a colour chosen to embrace that particular preparation. Because the plate, too, plays a part in the story. It is not simply a frame, but part of the composition: it dialogues with the ingredients, complements their colours, creates contrasts and suggests a gesture.

At Bellevue, wood is not simply a material. It is memory. In the carvings that inhabit the Casa, symbols, figures, gestures and small stories of Alpine life are preserved. Marks born from the hands of those who, before us, entrusted to wood what they saw, what they believed in, what they wished to pass down. You have to come closer to discover them. Observe the shapes, follow the traces left by the carving tools, imagine the time it took to create them. They are silent details, yet they tell us so much. Because here, even a door, a piece of furniture, an ancient beam can become a page on which a story continues to be written.

There is an hour at Bellevue when the afternoon seems to slow down. Outside, the autumn light settles over the Prato di Sant’Orso. Inside, the Bar gathers in the warmth of the Casa. A steaming cup of tea, something sweet prepared by our pastry team, time for a conversation or a few pages of a book. A simple, almost timeless ritual, belonging to mountain days: coming in from the cold, warming your hands around a cup and allowing yourself the pleasure of having nowhere to hurry. At Bellevue, even the afternoon has its own time.

🇬🇧
October has arrived, and the change of season can already be felt among the vineyards.

The harvest is over, summer is behind us, yet Collio still holds on to the warmth and light of the days just gone.

The vines are slowly changing colour, while the landscape prepares for autumn, revealing new shades and a slower rhythm.

At Cruna di Subida, it is time to experience Collio in a different light.

History on the walls, Gran Paradiso beyond the windows, the season on the plate. Each course is born from the encounter between memory and contemporaneity, between the essence of the mountains and the precise vision of the kitchen.
The Michelin Star illuminates a journey shaped by research, balance and sensitivity, but the experience lives above all in the details: in the rhythm of the service, in a carefully chosen glass of wine, in the surprise of a flavour that lingers.
An intimate table, for a select few guests.
And an entire mountain to tell.

At Bellevue, the sitting room opens onto the greenery.
Large windows let in the light and the landscape, bringing indoors the tranquillity of the meadows and the breath of the mountains.
The Sant’Orso meadow stretches out before your eyes, changing in colour and light throughout the day.
You sit down. You stay awhile.
With a book, a conversation, or simply a moment of silence.
