Is food an end or a means? Can a bite provoke interaction between strangers? Yesterday at the forum "Opportunities for the development of a differential innovation from the hand of the Cultural and Creative Industries" of the Euskadi Food Cluster we shared the work we have started in the field of digitalisation and technology linked to gastronomy. In order to do so, we shared the creative process of the creation of our 20th anniversary dish: "Momentum".
For this project, we had multiple collaborators and accomplices, who, from their areas, helped us to shape this dish that interacted with the diner and created a shared harmony between the whole dining room: Ben Houge, Jutta Friedrichs, Pep Gatell, Nadala Fernández, Iñaki Remiro and Sebastián Alberdi among others.
