Xinjiang Jiaoma Chicken with flax seed focaccia
When it comes to the most representative dish of my hometown, it’s definitely belong to this one. Chicken been cooked in Szechuan pepper stock then dressing with stock reduction a d Szechuan pepper oil. Leek, green onion, Chinese scallions been cooked in different way, braised, grilled, salads. Also, there are some asparagus and cilantro finished on top.

Focaccia come with fenugreek and flax flavor serve with chicken Rillettes.

菠菜面筋Urumqi Seitan Salad
First course from Urumqi event menu.

Seitan is a pure gluten made by washing the dough then steam them. Dressing with rice vinegar and house made chili oil. I add some tomato mayo to enhance the flavor(really like tomato mayo recently)On the top, covered by caramelized onions aged balsamic sauce dressed lettuce.

Fresh, spicy and yummy 😋

Melon pre dessert, try to keep it simple and refresh. Sliced melon, young coconut shave, green grape, jasmine tea jelly, coconut milk with parsley oil. Jasmine jelly bring everything together, super fresh flavor.
