People thought I was crazy when I quit my stable job as a business consultant—and put my industrial engineering degree on a shelf— 6 years ago. To start from scratch in a professional kitchen was one of the hardest jumps I’ve ever made, but I knew I couldn't spend my life wondering "what if."
