Kurobuta, prized for its marbling and depth of flavor, meets the bold, layered heat of chipotle and the bright herbal lift of aji verde.

A dish built on contrast: char and sweetness, heat and brightness, tradition and Spago’s own point of view.

There is something truly special about Maui - the beauty of the island, the warmth of its people, and the incredible spirit you feel every time you return. 🌺

Last night, I had the pleasure of cooking alongside my son Byron at Spago Maui at Four Seasons Resort Maui at Wailea for the next chapter of our Generational Tasting Tour. Two generations, two perspectives, sharing one kitchen and one table.

Thank you to our incredible Spago Maui and Four Seasons Maui teams, and to everyone who joined us for such a wonderful evening.

Seasonal dining at Spago begins where California is most alive – at the Farmers market, where color, texture, and flavor inspire ingredients to become something imaginative, elegant, and deeply of the moment.

20 years of CUT.

What began in Beverly Hills has grown into seven restaurants around the world. Beverly Hills, Las Vegas, New York, Washington D.C., Bahrain, London, and Singapore, each with its own identity, but all connected by the same commitment to excellence.

I’m incredibly grateful to every chef leading these kitchens, every member of their teams, and the entire WPFDG team behind the scenes who supports our restaurants and helps bring CUT to life every day.

It’s an honor to work alongside this level of talent, passion, and creativity. Celebrating a milestone like 20 years is something special, but more than anything, moments like these inspire all of us to keep reaching, keep evolving, and keep getting better.

Thank you to everyone who has been part of these first 20 years and to all of our guests around the world who continue to make it possible.

Here’s to what comes next. 🥂

A sweet finale with Spago’s sense of wonder: blueberry vacherin, sheep’s milk frozen yogurt, lemon verbena, and poppy seed meringue.

Friday night at Spago Beverly Hills was something special.

We brought Beyond the Vine: Angel’s Share x Spago to life with an incredible collaboration alongside @angelssharenyc and @mujenspirits

Six courses featuring Miyazaki Wagyu, paired with cocktails created to complement each dish. For me, nights like this are what hospitality is all about - bringing talented people together, pushing creativity, and creating an experience our guests will remember.

A huge thank you to everyone who helped make the evening happen, and to everyone who joined us at Spago. Looking forward to the next one.
