Buona lettura ✨

Preparing for colomba 🕊️ season
.
I did a new batch of dough earlier this week to start preparing for Easter. After all the colomba/panettone I baked (6 in total) this is the most beautiful: 500g in a low mold. Look that dome!
I don't know exactly what I did different from the others though, maybe just the preshaping and final shaping 🤷
.
Another difference this time is that I glazed all of them because It's a "must" for the colomba so I tried a recipe for the glaze from thermomix @bimbyitalia
.
I also finished my panettone flour from @molino.dallagiovanna and hat to use the brioche one (from the same mill). Could be this the reason why I obtained the softness panettone ever. Even the flavor was really good!

Abbracci 🤗
.
Because I finished the biscuits at home and I had some flour to finish too, I decided to replicate the famous abbracci (hugs) from @mulinobianco together with my son. He enjoyed a lot manipulating the dough like it was Play-Doh!
.
Thanks to @iledoucemilano for the recipe I learnt in their course (I just replicate the frolla dough and added a bit of cocoa powder for the chocolates half)

Bread with black cabbage
.
Thanks @_pasqualecannata for the inspiration!
.
My version of this bread is slightly different from the original recipe. I followed the method I'm used to but adding the extra black cabbage at the end.
Not sure of the exact hydration but over 75% for sure. Another difference is that I used my liquid sourdough only.
.
Taste is pretty good, externally didn't open as much as expected (I think it was under fermented) but then when slicing it it showed a nice crumb!

Pangoccioli
.
I had a couple of ingredients in the pantry, leftovers of the lasts panettones, so wanted to finish them and try baking something new. Since the main ingredient were the chocolate drops, the goal was to make the famous italian snack from @mulinobianco
.
It was the first time doing them so searching here in instagram I found the recipe from @dolcementeconmagda who I've been following for the last 2/3 years and she's very good at baking!
.
What to say... I liked them A LOT! even my toddler loved them. Really soft, tasty and not extra sweet. Give them a try!

First panettone of 2025 🍇🍊
.
Many things learned during this season. I made it to get rid of certain clichés, specially related to pasta madre. Then focused more on mixing and process.
.
I personally think is the best panettone I've done so far. Thanks to my mentors and friends that have helped me out in this journey.
.
Now it's time to prepare for 🕊️ season... Stay tuned.

With wholegrain flour
.
In this bake i went a bit up with the percentage of wholegrain flour (30%) and a bit less hydro (72%).
.
I think I could give it more hydration though.
.
In here i used both stiff and liquid levains because I wanted to do a hot refreshment to both so I took the opportunity to use the discards.
