this savory-sweet amaranth granola brings more than just a light, nutty crunch. 🌾

amaranth is naturally gluten-free, a complete plant protein, and a source of fiber, iron, magnesium, and manganese

amaranth granola
30g popped simpli regenerative organic amaranth
50g oats
10g tahini
20g coconut oil, melted
20g maple syrup
10g raw sunflower seeds
15g crushed raw pistachios
cardamom, coriander + sea salt to taste

preheat oven to 350°f.
to pop the amaranth, heat a stainless steel skillet over high heat for about 1 minute.
add 1–2 tsp amaranth at a time, cover, and shake for 10–15 seconds until the popping slows.
transfer immediately to a bowl and repeat.
combine all ingredients, spread onto a parchment-lined baking sheet, and bake for 10–15 minutes or until lightly golden.
let cool completely before storing.

spoon it over yogurt. add it to oatmeal. pour it into a bowl with milk and fruit. sprinkle it over ice cream. or eat it straight by the handful (we support that too).

REI Co-Op feels like a home for outdoor exploration with a philosophy that aligns with my own belief that the best outdoor equipment should encourage connection with nature while minimizing our impact on it.

there is no better time to honor our earth than every single day... but today calls us back to it. to pause. to notice. to recognize the quiet, overwhelming beauty that surrounds us💚

to protect what protects us.
to care for what has always cared for us.
to give back in the ways we can.
be mindful in how we live, how we create, how we choose.

a reminder to move & act with respect.

to repurpose.
to be appreciative of all we have.
to educate ourselves on how we can positively impact the planet.
to stay aware of what we consume, what we waste, and the impact we leave behind.

this planet gives endlessly, through its oceans, its animals, its forests, its soil, its air & its light and oh so much more. the least we can do is meet it with intention. happy earth day🌱
