Comment “DIP” to get this sent to your DMs 🍂

Ultimate sweet and savory fall dip: creamy garlic confit, whipped feta sweet potato dip. The sweet potatoes are baked and blended with a little yogurt, feta and garlic confit. Then I chopped pecans and cooked them in a little honey butter and spooned them over the top ❤️‍🔥

Crunchy Mediterranean quinoa salad!!! This is one of my favs and stays so well in the fridge throughout the week. The layers of flavor make it a salad I always go back to and I highly recommend you try it!!

How it made:
2 stalks of kale chopped
1 can chickpeas
1.5 cups quinoa (I cook mine in bone broth)
1 lemon
1 small container of feta
Pickled onions to taste (I did about 2 fork fulls)
1/4 cup olive oil
20ish tomatoes
2 small cucumbers

Massage about 2 tbsp olive oil into kale and then add tomatoes, cucumbers, crispy chickpeas*, feta, pickled onions into a bowl and mix.
Dressing: 1/4c olive oil + 1-2tbsp pickled onion juice + 1 lemon + seasonings of choice

Air fry chickpeas on 350 for about 15-20 min with seasonings of choice (I did salt garlic pepper paprika)
Cook quinoa according to the bag

Mix and enjoy!!
Send this to someone who would like it and save for your meal prep!

fall meal prep inspo! 🧡

the only thing that (partially) compensates for the loss of summer temps is the abundance of winter squash that accompanies the fall season. here are some of my favorite recent meal preps using all the fall veggies!
