"On Wednesday April 29, 2026 four Brisket King NYC champions return to the lineup as the celebrated food festival heads into its 14th year at Pig Beach BBQ in Astoria, Queens. More than 15 chefs and restaurants will compete for the crown this year, including Richie Holmes of Juicy Lucy BBQ, the two-time winner in 2019 and 2021; 2023 champion David Gill of Wildwoods BBQ; Leland Avellino of Avellino Family Barbecue, the 2024 titleholder; and last year’s Brisket King, Anthony Scerri of Smoke Sweats. "Brisket is front and center at Brisket King NYC, but you’ll be hard-pressed to find two chefs cooking it the same way. “Some chefs stay rooted in low and slow Texas-style barbecue, while others draw inspiration from Jewish delis, Caribbean flavors, Thai spices, and Mexican barbacoa,” says Jimmy Carbone, Food Karma Projects and Brisket King NYC founder. “Brisket King NYC is about the way New York cooks, with everyone bringing their own influences to the plates.”  - @invitednyc Tickets at Www.brisketking.com Community @friendsoffirefighters Presented by @foodkarmanyc @jimmysno43 Thanks @kikuichi.cutlery @burlapandbarrel @pigbeachqueens #brisketking #brisketkingnyc #itsinqueens

Tank Jackson was inspired by @peterkaminsky1 's "Pig Perfect" book. Heritage breeds, country hams... @holycityhog will be back at @pigislandnyc Sept 7th . He will have a double station - 1. Whole hog bbq with his all star team , and 2. An aged country ham- his @holycityhogs ham cured and aged by @bentonsbacon #tennessee Read an interview with author Peter Kaminsky from our blog archive, available on the pigisland.com site, 2021 Excerpt- "FoodKarma: What’s changed since you wrote the book? PK: I think the book holds up. It wasn’t a huge bestseller, but a lot of pig farmers and chefs and people who became cooks and chefs read it. It certainly galvanized a lot of people to try to get those Ossabaw hogs that I wrote about. A lot of people got into more sustainable farming, letting them graze, letting them get bigger and fatter so they’re more marbled and, where possible, they let them graze on acorns. The old country hams that I spoke about that need to be aged a year and a day also needed to be fed peanuts. Like acorns, that really imparts some flavor to the meat and some delicious fat, although acorns are the less saturated fat." https://pigisland.com/chef-interviews/peter-kaminsky-pig-perfect/ Tickets for the 15th annual @pigislandnyc at pigisland.com Community partner @friendsoffirefighters #pigperfect #heritagehogs #pigislandnyc

That is a direct result of our principles and husbandry practices. You can see all our pigs from mating to pregnant to farrowing to finishing all outside in expansive pastures and woods. No funny angles just videos of how and why we do what we do ! 6-8 pigs a week is all we can sustainably, humanely, ethically , and regeneratively produce until we can expand our footprint. we currently use 42 acres but we are prepping fencing and building another solar power station w @realmarekanhero to rotate over another 11 acres of virgin dirt ( land that hasn’t had any animal pressure) that’s 53 acres ! Allowing us to produce another 100 pigs a year using a rotational grazing system. Striving everyday to be the best WE CAN BE ! “Don’t just talk about it, Be about it ! “ coach Fly - aka Marvin Bishop 88’ lil league D town Redskins. Early lessons that never left me ! We put in the work. You see the results. Never settle for mediocrity. @swineantology team alert - chef @trevor_kunk has joined the TEAM ! @holycityhogs we have had 80+ piglets born on the farm at #Valhalla in the last 2 months from boars naturally covering sows.
