My homemade manti are back!

This time, it’s the more familiar Turkish manti. I usually make lamb manti but I’m loving the beef mince from @prydemeats so a beef version was always going to be on cards sooner or later.

Did you make these yourself I hear you ask? Yes I did. It took a lot of time, care and some people might say .. a bit of delulu .. to shape these dumplings into impossibly miniature pyramids. Multiply each dumpling by the hundreds and then you may finally be getting somewhere to make all the effort worth the while. You see, there are well over 300 dumplings per serving and I generally only have the stamina to make four servings in any one dumpling making session.😅

Once the dough is kneaded, rested, rolled, cut, filled and formed, the tiny manti are baked in the oven to crisp up and set. Once this milestone is reached, the rest of the dish comes together with much more ease. Whilst my Armenian sini manti finished their cook in the oven, these Turkish manti are gently boiled in a pot of water to cook through and soften.

I like to retrieve these delicate dumplings from their cooking water into a colander to drain. It’s best to handle these tiny morsels with care. Although their outer skin still retains a lovely bite after the dumplings have been boiled, any heavy handedness will run the risk of destroying their magnificent architectural form.

Whilst still hot, I douse the dumplings in a burnt butter sauce and toss everything through to coat. Tomato sauce laced with Aleppo pepper is ladled in, followed by dollops of garlicky yoghurt. Torn mint garnished on top signals to everyone that it’s time to eat.

Check out the comments to see how I made my manti.

Is tongue the gateway offal for your menu?

For some diners offal can be a challenge, but tongue is a versatile offal that suits a range of preparations and cuisines. It is a whole muscle that, when prepared, offers a similar size, shape, and texture to more familiar cuts.

Here @instakrill gives brined beef tongue the Korean BBQ touch - grilling thin slices of tongue over hot coals and serving alongside washed kimchi salad, rice and condiments for a build-your-own bowl adventure.

Think charred edges of tender tongue; kimchi crunch with a gentle fermented tang; crisp, salty nori bombs; and glossy sweet-savoury heat from the sauce.

Or in Mitch’s words “crunchy, smoky, caramelised, crispy - pretty good.”

Dumplings, dumplings, dumplings.

These are my Armenian manti aka sini manti .. Tiny boat-shaped, open faced dumplings which are filled with seasoned beef mince. Making these dumplings are a labour of love and previous experience from making my own Turkish manti, brought great insight into this maiden cook of the Armenian version.

I decided to stick to the mantra of ‘the smaller the better’ when it comes to manti. The effort increases exponentially every time the dumpling’s overall size decreases, but they eat so well when the dumpling dimensions are downsized, so all the hours of work are well rewarded. I especially love the experience of collecting these miniature morsels of yum onto your spoon .. like scooping cereal and milk, your spoon holds tasty savoury dumplings and sauce in instead.

These dumplings are twice baked. The first is a dry bake to set their shape .. to dry them out .. crisp them up .. and give them a little colour. To finish the cook, I grab an oven proof pan and ladle in a garlic laced tomato broth before arranging my baked manti on top. The second bake happens under a cover of foil .. to soften the dumplings and finish cooking them through in the pan.

To plate, I firstly douse my manti with burnt butter, followed by lashings of tomato sauce seasoned with Aleppo pepper. I like to serve my Turkish manti with garlic yoghurt and fresh mint leaves so did the same here with my Armenian sini manti.

These manti were gobbled up with gusto.

You may be discouraged to spend so many hours preparing a dish to only have it disappear in a manner of minutes … but really, that’s a true sign of success.

Would I make these again? Only when I have cleared up an entire day for such dumpling shenanigans. 😆 I’m warmed up now and feel a batch of homemade Turkish manti is imminent. Watch this space and see how these turn out. I might even pen down a recipe if you’re following along.

If there’s one dish I could eat everyday on repeat, it’s pretty well always going to be the Beef Maranggi Sate from @warisanbrisbane #ad

Beautiful pieces of @australianbeef marinated in the most delicious mix of spices, sweet soy, pickled veggies and a chilli sambal - it packs a pretty serious punch of flavour. The perfect spot (almost a hidden gem, if you will) tucked away in Fortitude Valley, if you’re cruising around but want something seriously tasty for lunch or dinner 🥩

When the smoker/BBQ is loaded up, there’s only one thing that NEEDS to be on there…

MEAT. 🥩🔥

Aussie beef, sausages and chicken — throw it on the grill, get that smoke rolling and let the fire do the rest.

No complicated recipes. No fancy tricks.

Just quality Australian beef, good smoke and a BBQ doing exactly what it was made to do.

Be honest… what are you putting on first? 👇

The weather has allowed me to squeeze in more comfort cooks of late .. Continuing with the Japanese vibes of yesterday’s chawanmushi is this hot pot of beef wrapped enoki rolls.

Sliced onions were quickly sautéed in the pot first before the beef rolls were laid on top. A lightly seasoned dashi was then poured in before everything was allowed to gently bubble away under the lid.

A final drizzle of beaten eat was then added to the pot to just set before spring onion and sesame seed garnishes decorated the somewhat “ugly but delicious” dish.
